I recently went through this same dilemma. Though it wasn't for our first song. We are going to the poconos in PA to get married and since we're not having a "first dance" until we get back, I burned a CD of country "wedding songs". Here are some of them:
When I said I do - Clint Black
You are the love of my life - Sammy Kershaw
She's Everything - Brad Paisley
From this Moment - Shania Twain
You save Me - Kenny Chesney
You had me from Hello - Kenny Chesney
Come a little closer - Dierks Bentley
A long Trip Alone - Dierks Bentley
Some People - LeAnn Rimes
I cross my Heart - George Strait
Say Yes - Dusty Drake
I could not ask for more - Sara Evans
Keeper of the Stars - Tracy Lawrence
Hope this Helps and Congrats!!!!

There are tons of country songs out there, as you can see from the list provided by other answerees. Some of my favorite ones are some songs that weren't radio played.
Between Now & Forever, Bryan White
God gave me you, Bryan White
To get me to you, Lila McCann
I'm getting married in August and my so to be husband and I are dancing to "Some people" by LeAnn Rimes. a-its a great song b-its not over played c-it has emotional significance (it was the first song we slow danced to).

Forever and Ever, Amen
Randy Travis
You may think that I'm talking foolish
You've heard that I'm wild and I'm free
You may wonder how I can promise you now
This love that I feel for you
Always will be
You're not just time that I'm killing
I'm no longer one of those guys
As sure as live
This love that I give
Is gonna be yours until the day that I die
Oh baby
Chorus:
I'm gonna love you forever
Forever and ever, amen
As long as old men
Sit and talk about the weather
As long as old women sit and talk about old men
If you wonder how long I'll be faithful
I'll be happy to tell you again
Just listen to how this song ends
I'm gonna love you
Forever and ever
Forever and ever amen
They say time takes its toll on a body
Makes a young girl's brown hair turn gray
Well, honey, I don't care
I ain't in love with your hair
And if it all fell out
I'd love you anyway
Well, they say time can play tricks on a memory
Make people forget things they knew
Well, it's easy to see
It's happening to me
I've already forgotten every women but you
Oh baby

I'm not a big country fan, but when I went to a cousins wedding they danced to "When you say nothing at all" by Allison Krause and that song really struck me as beautiful and not the usual twang that annoys my ears.

Amazed
by Lonestar:
Every time our eyes meet
This feeling inside me
Is almost more than I can take
Baby when you touch me
I can feel how much you love me
And it just blows me away
I've never been this close to anyone or anything
I can hear your thoughts
I can see your dreams
I don't know how you do what you do
I'm so in love with you
It just keeps getting better
I wanna spend the rest of my life
With you by my side
Forever and ever
Every little thing that you do
Baby I'm amazed by you
The smell of your skin
The taste of your kiss
The way you whisper in the dark
Your hair all around me
