By thinking a lot I mean more than average stays quiet and overloads themselves and get stressed out very easy.

I can think of two descriptors for a person that thinks a lot: Cautious or Day-Dreamer.
I believe being cautious is a good thing as long as the individual is not too cautious that he or she is always uncertain and doesn't take action. A cautious person evaluates his or her options, the factors and risks involved in an action or decision. And that is good! However, if a guy or girl is thinking too much on whether he or she should start a relationship (since we are talking about dating and stuff) and can't reach a decision, then it's not meant to be.

Day-dreamers never get anywhere. Period.

Bottom line: If your partner is cautious, and you sometimes think they exceed in this, be patient. Remember that a relationship is a partnership. If your partner is the thinker, then maybe all he needs is a little push. And if you love your partner, you shouldn't mind giving a push. Who said being with someone was going to be easy?

I would say they are internally preoccupied. Not a bad thing.
Or over analytical.
