Herb-Baked Chicken and Vegetables
Ingredients:
3 pound whole broiler-fryer chicken
3 heads garlic
1/4 cup whole fresh thyme or rosemary
6 medium carrots
4 medium stalks celery
3 medium baking potatoes
3 medium onions
2 tablespoons reduced fat/calorie margarine or butter
1 tablespoon chopped fresh thyme or rosemary
Heat oven to 375 degrees. Remove organ meats from chicken. Rinse chicken well with cold water and pat dry. Cut off tops of garlic exposing the individual cloves, but dont remove the garlic skins. Place whole cloves of garlic and 1/4 cup whole fresh thyme or rosemary inside chicken cavity. Tie drumsticks together with string and place chicken breast side up in a roasting dish. Roast uncovered for 45 minutes.
Cut carrots and celery into 1-inch pieces. Slice unpeeled potatoes into 1 1/2-inch pieces. Peel the onions and cut into wedges. After 45 minutes, remove chicken from oven. Arrange the vegetables around the outside of the chicken. Melt the margarine and stir in the thyme or rosemary. Drizzle margarine over the chicken and vegetables. Cover and bake another 45-60 minutes or until chicken is no longer pink or a meat thermometer reads 180 degrees.

Bruschetta Chicken Bake
(Found in the back of Stovetop Stuffing Mix box, it's what I'm making tonight with some veggies on the side)
INGREDIENTS
1 1/2 pounds skinless, boneless chicken breast halves - cubed
1 teaspoon salt
1 (15 ounce) can diced tomatoes with juice
1/2 cup water
1 tablespoon minced garlic
1 (6 ounce) box chicken-flavored dry bread stuffing mix
2 cups shredded mozzarella cheese
1 tablespoon Italian seasoning
DIRECTIONS
Preheat oven to 400 degrees F (200 degrees C). Spray a 9x13-inch glass baking dish with cooking spray.
Toss the cubed chicken with the salt in a large bowl. Place the chicken in a layer into the bottom of the baking dish. Stir together tomatoes, water, garlic, and stuffing mix in a large bowl; set aside to soften. Sprinkle the cheese on top of the chicken, then sprinkle with the Italian seasoning. Spread the softened stuffing mixture on top.
Bake uncovered until the chicken cubes have turned white and are no longer pink in the center, about 30 minutes.

Stuff a chicken breast with goats cheese - add some sundried tomatos or basil if you wish. wrap in parma ham, bacon or ordinary ham. Roughly chop whatever veggies you have knocking around - maybe some red onion, peppers, tomatos or courgettes, new potatos, place the chicken on top and roast for about 25 - 40 mins depending on size of chicken and veg. When serving pour over the pan juices to mop up with some crusty bread.

Put some boneless chicken in a baking pan. Pour a can of condensed French onion soup over it. Bake at 375 until the chicken is done, then put shredded mozzarella on top and bake for another five minutes or so.

Pop some chicken or cube steaks or whatever into a skillet with a can of mushroom, onion or celery soup, simmer low while you tear up a salad, pop a veg in the micro wave, stir up some rice or potatoes (both instant) and throw a 5 min Apple crisp in the oven and you shine in 30 minutes...

You bake 3 boneless skinless chicken breasts. After that you combine 1 can of crm. of mushroom soup 1can of enchilada sauce1tsp of garlic powder and shred the chicken in it. Put 1/2 a bag of tortilla chips in a baking pan. put your mixture over it sprinkle with a cup of cheddar and put the rest of the chips on top. Then pour a cup of chicken bouillon over it all. It is called chicken enchilada bake. it is great. Bake at 350 for 30 min.

with parsley butter. (Or Chicken Scalloppini its just the same as the veal: a thin cutlet beaten quite thin, dipped in flour, beaten eggs, and crumbs, sauted 3 or 4 min's each side and served ....)- ice cream for dessert /white wine, little glass of?? * coffee

Boil some pasta, once cooked, add a can of Bravo spaghetti meat sauce and top with shredded cheese. You can't get easier than that and kids love it.
