How is the best way to cook chicken with salsa? We are looking for a healthy version. . .

Baked Chicken Salsa

1 chicken breast
1/2 cup salsa
3 jalapeno peppers, sliced
6 small black olives

Cut a piece of tin foil large enough to close around the chicken breast.
Place the chicken breast onto the foil and pour salsa over top of the breast.
Place peppers and olives on top.
Wrap the foil around the chicken and fold the ends together tightly and place in an oven dish.
Bake at 400 degrees for 60 minutes.

CHEESY SALSA CHICKEN

4 skinless, boneless chicken breasts or thighs
1 16 oz jar chunky salsa, medium
4 slices Swiss cheese
4 slices tomato
1 tbs. butter

Brown chicken in butter using a skillet. Once browned, cover chicken with salsa. Cover and let simmer, about 30 minutes, or until chicken is done.
Remove from heat. Cover each piece with a slice of tomato and a slice of cheese.

Replace cover and let the cheese melt and tomato warm, about 10 minutes.

Serves four. White rice is very good with this.


CHICKEN-SALSA CASSEROLE

3 whole chicken breasts, cooked and boned
1 med. onion, chopped fairly fine
1 c. milk or chicken broth
1 can cream of mushroom soup
1 can cream of chicken soup
1 lb. mild Cheddar cheese, grated
1/2 jar medium-hot chile salsa or 1 can Ortega green chile salsa
1 dozen corn tortillas
1 jar whole button mushrooms

Or use 2 (12 oz.) cans boned chicken or leftover chicken, cut into bite-size pieces.
Cook raw chicken by boiling in about 2 cups water with a bay leaf and 3 black peppercorns and a dash of salt. When done, remove bay leaf and peppercorns and, if you wish, you may substitute this stock for the milk, or use half stock and half milk.

In a greased or sprayed 2-quart casserole, place 6 of the tortillas on bottom and sides.

Mix onion, milk or stock and chile salsa and mushrooms together. Mix in half of the cheese. Add the cubes, boned chicken to this mixture and pour half of it over the tortillas. Place remaining tortillas on top, and add the rest of the chicken mixture. Top with remaining grated cheese. Refrigerate a few hours before cooking. Bake at 350 degrees for about 45 minutes or until hot and bubbly. Serves 6.

I like it best w/ the chicken dipped in egg/milk, then in seasoned flour. Arrange in a baking dish. Bake for 20-30 min at 350º-375ºF to get a crust going. Then top w/ salsa and bake until tender, about another hour. You may want to cover chicken the first 40 min or so after adding salsa.

You know..I personally make mine very simple...

When I make tacos at home..I don't use hamburger meat..I cut up chicken in thin strips and use fresh salsa from the deli and just fry it up in the same pan. The chicken will absorb the flavors and we just add a little bit of cheese..It really does just taste like a secret chicken receipe..

Very simple. You dont have to make everything from scratch to make it fantastic

I grill my chicken on the counter top grill machine and then allow the cooked chicken to simmer in a large saute pan in the salsa. keep covered so it doesnt dry out.
