As for shamans, indigenous people (such as Native Americans) don't use the term shaman (with the exception of the Siberian tribe from whom the word was taken). Most of what you see offered is actually neoshamanism which, while useful, isn't genuine traditional shamanism. Check out http://en.wikipedia.org/wiki/Plastic_shaman for information regarding "plastic shamans" and other frauds.

Look up the "Internet Book of Shadows". It consists of sources from many different people, detailing their rituals beliefs, as well as poems, songs and stories.

First you'll want to define what you mean by paganism. Saying you want to learn about paganism is akin to saying "I want to know about Eurasian mythology".
Paganism is an umbrella term - there are several hundred past (and newly reformed) religions that fall under it.

Scott Cunnigham's "Wicca" is a very good book.
Christopher Penczak has a couple very good books on modern Shamanism.
www.spellsandmagic.com is also a good resource.

Shamans can be categorized with evil and mystic practices, along with the whole of witchcraft, black magic, etc.
