Bacon-Wrapped Meat Loaf with Brown Sugar - Ketchup Glaze
--Cooks Illustrated, Sept.1996

If you like, you can omit the bacon topping from the loaf. In this case, brush on half the glaze before baking and the other half during the last fifteen minutes of baking. Serves 6 to 8

Brown Sugar - Ketchup Glaze:
1/2 cup ketchup or chili sauce
4 Tbsp.s brown sugar
4 Tbsp.s cider vinegar or white vinegar

Meat Loaf:
2 tsp. vegetable oil
1 medium onion , chopped medium
2 medium cloves of garlic , minced
2 large eggs
½ tsp. dried thyme
1 tsp. table salt
½ tsp. ground black pepper
2 tsp. Dijon mustard
2 tsp. Worcestershire sauce
1/4 tsp. hot pepper sauce
½ cup whole milk or plain yogurt
1 pound ground chuck
½ pound ground pork
½ pound ground veal
2/3 cup Saltine crackers , crushed (about 16), or quick oatmeal, or 1 1/3 cups fresh bread crumbs
1/3 cup fresh parsley leaf , minced
8-12 slices bacon

1. For the glaze: Mix all ingredients in small saucepan; set aside.

2. For the meat loaf: Heat oven to 350 degrees. Heat oil in medium skillet. Add onion and garlic; sauté until softened, about 5 minutes. Set aside to cool while preparing remaining ingredients.

3. Mix eggs with thyme, salt, pepper, mustard, Worcestershire sauce, pepper sauce, and milk or yogurt. Add egg mixture to meat in large bowl along with crackers, parsley, and cooked onion and garlic; mix with fork until evenly blended and meat mixture does not stick to bowl. (If mixture sticks, add additional milk or yogurt, a couple Tbsp.s at a time until mix no longer sticks.)

4. Turn meat mixture onto work surface. With wet hands, pat mixture into approximately 9-by-5-inch loaf shape. Place on foil-lined (for easy cleanup) shallow baking pan. Brush with half the glaze, then arrange bacon slices, crosswise, over loaf, overlapping slightly and tucking only bacon tip ends under loaf .

5. Bake loaf until bacon is crisp and loaf registers 160 degrees, about 1 hour. Cool at least 20 minutes. Simmer remaining glaze over medium heat until thickened slightly. Slice meat loaf and serve with extra glaze passed separately.

Mama’s Spaghetti and Meatball Sauce

The trick to this recipe, as in most Italian cooking is to use the best ingredients you can find. The choice of meat is up to you, but I try to add a piece of both sparerib, and beef to the sauce, and prefer a combination of beef and veal, or beef and turkey for the meatballs. Here is the recipe;

For The Sauce:
2 Tbsp. Olive Oil
2 Cloves of Garlic, Minced
1 Small Onion, Chopped Fine
1 Stalk of Celery, Finely Chopped
2 or 3 Small Pieces of Meat (Pork, Beef, or Chicken)
Salt & Pepper
1/4 Cup Chopped Basil
1/2 Tbsp. Dried Oregano
1/2 Tbsp. Dried Thyme
1/4 Cup Chopped Fresh Parsley
Dash of Red Pepper Flakes (Optional)
2 (6oz) Cans Tomato Paste
1 (26 oz. can/box) Pureed Tomatoes
About 5 Cups water
3 Tbsp. Grated Parmesan Cheese
1 Pound Of Spaghetti or Pasta of Choice

Brown the meat pieces in the oil until well browned. Add the garlic, onion, and celery and sauté until tender. Add the paste, tomatoes, water and herbs, and bring to a boil. Season with salt and pepper to your own personal taste. Turn mixture down to a simmer, then drop the prepared meatballs into the sauce. Do not stir for the first 15 minutes or so until the meatballs begin to firm up.

Continue to cook for 2-3 hours, stirring occasionally, and adding extra water as needed if the sauce becomes too thick. This sauce, with or without the meatballs can now be used over your pasta of choice. Just before serving, stir the 3 Tbsp. of grated cheese into the sauce. Though most people would choose spaghetti, personally I prefer rigatoni or penne. Serve over pasta cooked al dente, and offer a little more parmesan cheese at the table. With the addition of a nice mixed salad and some crusty Italian bread, this pasta dish would easily make a complete meal. I would choose a robust Chianti wine to accompany this meal.

Meatballs:
1 lb. Ground Beef
1/2 lb. Ground Pork or Veal
Salt & Pepper
1 or 2 Cloves Garlic, Minced
2 Tbsp. Fresh Chopped Parsley
2 Tbsp. Grated Parmesan Cheese
1 Egg
1 Cup Soft Bread Crumbs
1/2 Cup Water

Add the bread crumbs to the water to moisten. Mix all the ingredients together with the bread crumb mixture. Shape into golf ball sized balls, and gently drop into the simmering sauce.

Taco Soup

1-1½ lbs. lean ground beef
1 onion, chopped
1 can beef broth (or 2 cups water + 2 beef boullion cubes)
1 can whole kernel corn, undrained (I like the mix of white and yellow corn)
2 cans diced tomatoes, any variety, undrained (I like petite diced, w/ onions and bellpeppers in them; if you want heat, use at least one can of Rotel)
1 can red or black beans, drained and rinsed
1 packet Taco seasoning

Garnishes (any or all)
sour cream
diced green onions
sliced black olives
sliced jalapenos
guacamole
shredded cheddar cheese


Brown ground beef over medium heat in large stock pot. When nearly cooked, add onions and sauté w/ ground beef. When onions are wilted but still opaque, stop cooking and drain off any fat. Return to heat and add remaining indredients. Cover and let simmer at least 30 minutes, or up to about 3 hours. (Can be held longer in a slow cooker set on Low.)

Serve in bowls w/ crushed corn chips in the bottom. Top each bowl w/ garnish of choice.

Easy Hamburger Stroganoff recipe

4 Servings
Ingredients
1 lb Lean ground beef 1 4 oz can mushroom stems and
1/2 c Onion; chopped 1 c Water
1 Clove garlic; minced 1 c Sour cream
1 ts Instant beef bouillon 2 c Cooked noodles or rice
3/4 ts Salt 3 tb Flour
1/4 ts Pepper


Directions
Cook and stir the meat, onion, and garlic in a large skillet until the meat is brown. Drain off the excess fat. Mix in the flour, bouillon, salt, pepper and the can of mushroom stems and pieces. Stir in the water and heat to boiling, reduce the heat and simmer, covered, for 10 minutes. Stir in the sour cream and heat until just hot. Serve over the noodles or rice, garnish with chopped parsley.

Okay this is my meatloaf, it's AWESOME for 30 people I don't know but take all the ground beef add a loaf of fresh bread torn into pieces (this will create a marble effect in the meatloaf, kind of like in a really good steak, and will cut down on the grease at the bottom of the pan) add, I don't know 5 or 6 eggs a head of fresh minced garlic two tubes of ritz crackers (generic is fine) salt to taste pepper to taste and (this is important) a LOT of Old Bay seasoning for 20-30 pounds I'd say at least a good half of a can of it (I don't know what it does to the meatloaf but it makes it incredible, It gives a warm heady spice smell to it) for the topping I slice thick beefsteak tomatoes until they cover the top. I bake it for 45 minutes to an hour until it's almost done and the tomatoes are caramelized, and then I spread tomato ketchup over the top of that and put it back in for about fifteen minutes. The topping is thick and pretty and very satisfying feel free to tweak it all you want.

Tamale Pie.

Yummy: Ground your hamburger meat. Drain the meat, combine 2 cans tomatoe soup, 1 cup cheddar cheese, can of corn, a dice onion and a dice bell pepper in a pot. Cook until it comes to a rolling boil. Once all of the cheese is melted and all of the ingredients are combined, get a 8 X 12 baking tray (cake tray).... pour in the ingredients. Cover the ingredients with corn meal and bake at 325 degrees for about 35 minutes, or until corn meal is done. I am so cooking that soon... my mom's and nana's recipe. Not of no cooks.com... memory right there...

My husband and I LOVE stuffed green peppers.
I am not sure how much you are making so you may have to alter the amount but there is no way to mess this one up - that is one thing I love about it.
4 medium to large green peppers, washed with the tops sliced off - cleaned out. No seeds etc.
1 to 2 packages of Mahatma Yellow rice - cooked.
1 pound or so of cooked hamburger. Add some Mrs. Dash original when cooking.
1 package of shredded cheese . [Colby and mozzarella]
1 jars of Ragu - the cheese flavored one
Depending if you like tomato's I use canned/diced tomato's.

Mix the cooked rice, hamburger and tomato's in a bowl. Then start stuffing the peppers. I usually add some of the rice/hamburger mixture 1st, then add ragu, cheese and then repeat it. Just make sure it is even and mixed well in the peppers. Leftover rice and sauce can be put in the pan with cheese .

Bake at about 350 [cover it with Reynold Wrap] until the peppers are soft.


This recipe can be altered to the way you like it with more or less of the ingredients but just make sure you have plenty of Ragu and cheese. So it is not dry but this always tastes great and is not to hard to make.

Be creative, that's what I do.
Make like a beefaroni type dish.

Brown ground beef with onion, drain.
Cook some pasta (any type of macaroni), mix in a can of spaghetti sauce (or make a cheese sauce) along with the ground beef and onion. Top with a little shredded cheese and throw in the microwave or oven to melt the cheese and heat through.

Crescent rolls (8)
Taco chips, crumbled
Ground beef 1 lb. with taco seasoning
8 oz. sour cream
Shredded cheese

Crescent rolls in bottom of 9 x 13 pan. Crumbled chips on top then put ground beef then add sour cream, shredded cheese and bake at 350 degrees for 25 minutes. When done top with lettuce, tomato, onion, olives, etc.

Stuffed peper soup! It tastes just like stuffed peppers and you can do it in the crock pot.

Brown 1 pound of ground beef and add to crock pot.
Chop 1 medium onion, 1 large green pepper, 2 cloves of garlic and sweat them in the skillet where you browned the ground beef. Once they are softened, add to the crock pot too.
Now add two cans petite diced tomatoes or italian seasoned diced potatoes, one can of condensed tomato soup and two cans of beef broth, Stir to combine. Cook on low for about 4 hours to combine flavors.

In a seperate pot, cook 1 cup dry rice per package instructions.

About 20 minutes before serving, add cooked rice to crock pot.

This is an easy dump crock pot recipe and you can add more tomatoe soup or tomato paste if you like it thicker. If you portion it and freeze it before you add the rice it freezes really well and the rice can be cooked and added later.

Ingredients Instructions
½ kg. minced beef
250 gms. Potatoes (cut in small pieces)
2 tomatoes
1 onion (large size)
6 tbs. oil
6 whole black pepper (Kali Mirch)
6 cloves (Laung)
1 black cardamom (Bari Ilaichi))
1/4 tsp. cumin Seeds (Zeera)
1 tsp. coriander (Dhaniya) powder
1 tsp. salt (according to taste).
¼ tsp. turmeric (Haldi) powder
¾ tsp. chili (Lal Mirch) powder
1 tsp. ginger (Adrak) paste
1 tsp. garlic (Lehsan) paste
½ tsp. garam masala powder
Finely chop the onion and sauté in oil until light brown.
Add all the spices and finely chopped tomatoes.
Cook on medium heat till water is almost dried. Add mince meat mix and dry the water again.
Add 2 glasses of water cover and cook till meat is tenderized and the water dries.
Add potatoes and cook till the potatoes are soft.
Sprinkle garam masala powder. Garnish with fresh green Coriander (Dhaniya) leaves, green chilies and Ginger (Adrak) slices and lemon juice.
Serve with naan
Serving: 4 to 5 persons

1 can each,cream of celery,onion,mushroom,cheese if you dont like one of those substitue with another
1 pk egg noodles
cook the meat add the soups with one can of milk and 1/2 cup water simmer for a few min till hot and bulbbly
add cooked noodles ,good luck

try onions, peppers, garlic, egg noodles and
ground beef. that is quick and easy.

- another one is stuffed peppers.

- also filled fried dumplings are good.

ground beef is not healthy though - so only once a month.
