Hi! I'm not single but I cook often for one as my husband travels a lot for business. A typical meal could be:
- 60grams of pasta or rice, followed by a nice mixed salad which I make with greens, hardboiled eggs, tomatoes, green olives and chives
- soup made with 40 grams of red lentils, followed by a steamed zucchini salad + a piece of cheese or Parma ham
- chickpea salad (made with boiled chickpeas, which I then stirfried with onions and chopped cabbage leaves) + grilled chicken breast
- noodle soup (with 50 grams of noodles, some shitakee+veg stock+ half tbspoon of soy sauce and half of rice wine+shredded cabbage) - on top of the bowl I add a grilled chickenbreast or a small piece of pork fillet

I have a whole book here of cooking for two or just you. What kinds of stuff do you like and I'll look up stuff. Just email me! And it's healthy cooking too, not overly processed.
Another trick I like is to make a big batch of pasta and have that one night, the next night put it in a big pan, top with cheese and olives and bake it, the night after that, nuke the leftovers. Dinner for 3 nights!

There are some delicious recipes and the serving is for ONE person, which can be very difficult to find! None of them are that much work to prepare but are much more fulfilling than ramen!!
ENJOY
Garlic Pasta for One
4-6 ounces dried linguine or thick spaghetti or other dry pasta
2-3 tablespoons salt (for pasta water... NOT optional)
3-4 tablespoons olive oil
3 cloves garlic, minced
1/8 teaspoon crushed red pepper flakes
3-4 anchovies
1/4 cup sun-dried tomatoes packed in oil, chopped (if using the dry kind, reconstitute in boiling water)
1/4 cup freshly grated parmesan cheese (NOT the kind from a green jar, and it should be finely grated, not the big shreds)
salt & freshly ground black pepper
Bring a few quarts of water to a good rolling boil, using the 2-3 Tbsp of salt to flavor the water.
You should be able to taste the salt in the pasta water, if you can't taste it, add more salt.
Prep all ingredients in advance while you wait for the water to boil (mince the garlic, grate the cheese, chop the sun-dried tomatoes, etc.) so that you can toss the sauce together while the pasta is cooking.
Heat the olive oil in a skillet over medium-low heat, add garlic and turn heat to low.
It is CRUCIAL that the garlic not burn or turn brown.
Add pepper flakes, anchovies, and sun dried tomatoes and cook on low heat for 3-4 minutes until the garlic loses the raw taste and the anchovies disintegrate.
When pasta is cooked al dente, drain it and add it to the skillet with the sauce, tossing to coat well.
Sprinkle with the grated cheese.
Pour the pasta into a bowl, or just eat it out of the skillet!
Baked Frittata
2 large eggs
1 small zucchini, sliced
1 small tomato, diced
6 mushrooms, sliced
1 tablespoon butter
1 potato, cooked and diced (optional)
2 green onions, chopped
1 clove garlic, minced or pressed
1/4 cup chopped fresh parsley
1/4 cup grated cheddar cheese
salt
freshly ground black pepper
dried basil or fresh basil
Note that just about everything here is optional.
Use vegetables you like.
Use the kind of cheese you like.
And if you don't have leftover boiled potatoes, don't sweat it.
The dish will just be a little less hearty.
Preheat oven to 350F degrees.
Spray a pie plate with Pam.
Beat eggs in a fairly large bowl.
Meanwhile, heat butter (or cooking oil, but butter tastes better) in a skillet and saute the veggies of your choice along with the garlic.
When tender, scrape into the beaten eggs.
Add the parsley, cheese (try swiss for a change, or even mozzarella) and seasonings and stir.
Pour into prepared pie plate and bake for 20-25 minutes until set.
Let stand for two minutes, then cut into wedges and enjoy.
Quickie Mexican Pizza
1 (6 inch) flour tortilla
1/4 cup salsa
1/4 cup canned black beans or cooked black beans
1/4 cup shredded cheddar cheese (2% fat is fine) or Mexican blend cheese
2 tablespoons diced green chilies
Spread toppings on tortilla in the order mentioned.
Bake about 10 min at 325°F.
Chicken & Broccoli Delight
INGREDIENTS
1/2 pound skinless, boneless chicken breast halves - cubed
1 1/2 cups frozen broccoli florets
1/2 cup uncooked elbow macaroni
1/2 cup shredded Cheddar cheese
1 (10.75 ounce) can condensed cream of chicken soup, undiluted
3/4 cup chicken broth
1/4 teaspoon garlic powder
1/4 teaspoon pepper
DIRECTIONS
In a large bowl, combine the chicken, broccoli, macaroni and cheese. Whisk the soup, broth, garlic powder and pepper; stir into chicken mixture. Transfer to a greased 1-1/2-qt. baking dish. BAke, uncovered, at 350 degrees F for 30 minutes.
Stir; bake 25-30 minutes longer or until chicken juices run clear and macaroni is tender. Let stand for 5 minutes before serving.

Just go to www.allrecipes.com They have a conversion tool on there that lets you put how many servings you need for each recipe (like 1 for yourself) and it will automatically change the amounts of each ingredient in the recipe - really cool try it :) The other thing I like about this site is that it has reviews on the recipes from people who've actually tried them.
