Beer - Marston's Pedigree, draught or bottled, because is is a very good beer that is available nationwide if you look for it. Brains SA, Timothy Taylor's Landlord are also excellent, but not so widely sold. Batham's Best Bitter, from Dudley, is magnificent, but hard to find outside of the West Midlands. Adnams Bitter is superb, as are the products of Robinson's in Stockport. Deuchars IPA from Scotland smacks the lips.
As an exiled Geordie, I don't know what has happened to Newcastle Brown Ale, but it ain't what it was when I was young.
Dessert. I don't have a sweet tooth, so profiteroles, gateaux etc are out for me. I like the apple pie I make myself, a peach marinaded in Kirsch is pleasant, but, for me, the cheeseboard is king.
In my restaurant, I match beers to meals ( I don't do nouvelle cuisine - little bits of food with an artwork of sauce - my fare is a bit more robust, similar to that which Antony Worral Thomson does on the TV). Pedigree compliments my beef stew, lighter bitters such as Adnams go well with my spaghetti bolognaise, and I plug Kingfisher lager with my lighter curries. I don't sell Fosters and that ilk - my lagers are Kingfisher and Dortmunder. I make my own burgers - steak mince, breadcrumbs, a little Worcestershire sauce, bound with Boursin cheese, sold with saute potatoes. Dortmund goes well with this dish.

Best beer - Otter bitter from Devon. (Brains Smooth from Cardiff is a close one)
Best pudding - very tricky, but possibly treacle tart. With custard or Devon clotted cream...

Sam Smiths. Everything they make is good and their lager compares with the european best. Pudding? Ginger pudding with butterscotch sauce.
