I've been to Philly and Geno's is NOT the place to go. I'm not sure how they stay in business. From what I hear provolone is the best for an authentic cheese steak.

Cheez Wiz if its a real cheese steak. You can get provolone if you want and it still tastes good. But go with the wiz and some hot sauce!

well u can use american or povolone or yea and i said or mozzerella w/ am cheese(american) dont forget the fried onions and ketchup!!! and for all the readers i see some of u may have heard about pat's steaks or geno's steaks but the best places to get a cheese steak in philly are maxx's, gooey louies, ishkabibles, atlas pizza.

A true cheesesteak is made with Cheese Wiz. You can use anykind of cheese you wish though, it all depends on your tastes. Enjoy the greatest sandwich ever created!

Please don't use cheez whiz. no self-respecting cheesesteak eater uses that stuff. (Pay no attention to the fact that you can get it at Pat's. That's another issue!) American or Provolone is authentic. I rarely eat them anymore because of the fat content, but if I were to order one, I'd get Provolone. Use what you like best, but those two are the original choices.

There are two types. There is provolone (my preference, just because I like the taste better) and Cheez-Whiz, which is a "cheese food product." Everyone has their favorite.

If you're going to use the orange runny kind, it has to be Cheez Whiz, not Velveeta (even though they're made by the same company). You can also use Provolone.
