Well a crass way to put it is the sign for poo, which is to put up your right thumb, wrap your left hand around it, and pull your right thumb out of the bottom (see Meet the Fockers for a demonstration), but I think this is a little tasteless.
A more polite way would be to simply make the ASL letter "t" (make a fist and tuck your thumb in to stick up between your pointer and middle fingers) and sort of twist your hand back and forth at the wrist. That's what I have used in classrooms and in home-health settings in a few different states, and it seems to be more universal and not as crude as what is used in Meet the Fockers. If it is easier, the letter "B" used in the same way works too (four fingers pointed upwards, closed together and your thumb folded across the palm of your hand). The "B" may be easier for a baby to copy since the fine motor skills are not as developed for him yet.
If it's hard to visualize, Random House has a good illustrated dictionary that I have used for a few years.

Do you know how to make the letter "T"? Right hand in a fist with thumb between the index and middle fingers, now shake the fist in front of the chest with the palm facing forward.

The ASL sign for "toilet," is formed by placing the thumb between the index and middle fingers (this forms the letter "T" in ASL), then quickly twist or shake the hand from side to side. Note that this sign doesn't always specifically refer to an actual toilet. It can be used in a generic sense to convey meanings such as "bathroom," "toilet place," "elimination," "need to go," "pee" and so on.

Really anything that you mutually agree upon is fine for baby sign. I've seen one in particular, though -- you make a "T" and turn your hand back and forth. The letter "T" is made by making a fist but putting your thumb between your index and middle finger.

the sign for toilet is a letter T sign twisted back and forth at the wrist (in case you're not sure, the T sign is a fist with your thumb in between your index and middle finger)
the sign for restroom in an R sign bent at the wrist and pointed the the left then right (in case you're not sure, the R sign is your index and middle fingers crossed like you're crossing your fingers with the other fingers in a fist)

You could use the sign for "poop" - thumb up and wrap your other hadn around the thumb, them pop your wrapped hand up and off the thumb. That may work.
good luck potty training a one year old boy....mine is three and he still wont do it, regularly, anyway.
