I'm making a very tough to bake cake from scratch, the recipe calls for cooling the cake 2 hours in the refrigerator before frosting....Do I cool it still in the pan, or do I take it out of the pan to cool it?

Let it cool in the pan for 10 minutes then take it out and let it cool to room temperature. Then wrap it and put it in the refrigerator for the 2 hours. Unless the recipe specifies otherwise, that's the way I would do it.

It would depend on how well you greased the pan--some times you can cool a cake then remove it but in most cases I've found it easier to remove the cake while still warm then let it cool down afterward on a rack or serving platter then frost. If I've let the cake cool in the pan and the recipe didn't specifically state that then the cake is usually so "glued" to the pan that I practically needed a chisel to remove it.

I suggest taking it out of the pan and put it on a rack or cake plate then stick it in the fridge to cool.
From personal experience cakes can get stuck to the pan if you leave it in the pan to cool in the fridge.

I cool cakes and cookies like this all the time, I just stick them in there with the pan and everything. Never had a problem.

i would let it cool about fifteen minutes or so then take it out of the pan before you put it in the fridge or it may stick to pan.

I usually put the cake on a cake board, allow it to cool at room temp and then transfer it in the fridge.

Me personally I would take it out of the pan. If you leave it in it may get to much moisture through it and the bottom will get soggy.
