Being a former chef and having used turkey roasts and other turkey products, the first repondant is more accurate than the other 2, first to be called Turkey roast or Deli turkey it has to 100% turkey, the last repondant and the second spoke of a processed mix of things, that cannot be called Roast or Deli turkey, it has to be labelled Turkey Roll or a Turkey Loaf.

I had this same discusstion we a waiteress who was a vegetarian one time, she said, if there are no bones it cannot be turkey, Deli turkey meats like roasted, plain or Cajun are mainly turkey breasts that have been seasoned, and pressed before baking or steaming, the cooled and wrapped for sale to grocery or foodservice outlets.

They are 100% real turkey, not ground up, full of fillers or chemical, nor do they have other meats like chicken or pork added, the only way that can be done is fo it to be call a luncheon meat or whatever.

I worked in the Hotel trade in Canada for 20 yrs, use everything from Turkey roast for sandwiches both hot and cold, turkey bacon, sausages, turkey pastrami, nuggets and fingers and ground turkey in sauces and stuffings. It is a low calorie, low fat, high protein meat with many uses, so enjoy it in many ways, and alway remember not to believe everything you hear, or you would not eat anything from some of the crazy answers people flog this site with.

Any of the deli meats that are not labelled as a turkey breast or whatever part are made up of smaller portions of that same meat. So a deli turkey breast would typically be a bunch of turkey breasts that were shredded, flavors added and then pressed together to make the deli shape. It is a process similar to how a sausage is made. There isn't anything inherently unhealthy with the process, it is the additives that make deli meats unhealthy. There is usually added fats and flavorings that you may not want, read the label carefully and by Boar's Head brand or similar brands that don't add anything to the meat.

real turkey breast is just that-plain turkey. Deli turkey has cereal fillers, binder, artificial colors, artificial flavors, and loads of other stuff. It contains bits of turkey meat all ground together and presses to look more like the real thing-nasty toxic stuff, full of bad things and loads of sodium and preservatives

Deli turkey is a processed meat, while fresh turkey is just that. Stick with fresh turkey, it is healthier, and has better taste.
