My brother-in-law and his fiance are coming over for dinner tonight. It was a last minute decision and I didn't stock up on groceries. I am not making an effort to run outside (it's snowing in NY) and pick up some extra stuff. I have three fair sized boneless chicken breast and there will be the 4 of us. What dishes can I make that require cutting up chicken in small pieces so that it can make 4 dishes for all of us. I am thinking of a casserole but that doesn't include one too many ingredients (remember I did not go shopping). I was thinking perhaps with rice, pasta or maybe even stove-top. Ideas, suggestions and full recipes are greatly appreciated. THNX!

I'm in NYC too and I don't blame you for not going out. Not sure what ingredients you have on hand besides chicken at home but give the chicken recipes below a try. The last recipe is a pork chop recipe but I've done the same recipe using chicken instead. Fabulous!
They are super quick, tasty and quite filling and of course you can tweak them to your liking.

Homemade Chicken Fettuccine
INGREDIENTS
8 ounces fettuccine pasta
2 tablespoons butter
3 skinless, boneless chicken breast halves - cut into chunks
8 ounces mushrooms, sliced
1 teaspoon garlic salt
1/8 teaspoon ground black pepper
1 1/2 cups heavy cream
1/4 cup grated Parmesan cheese
DIRECTIONS
Bring a large pot of lightly salted water to a boil. Add fettuccine and cook for 8 to 10 minutes or until al dente; drain.
In a large skillet, brown chicken and mushrooms in butter until chicken is cooked through. Season with garlic salt and pepper. Add whipping cream and cook until thick, stirring constantly. Add parmesan cheese when at desired consistency. Serve over noodles.
If you don't have the exact ingredients, just improvise with what you have.
Additional:
My mom just said, make rice and cut of the chicken, add to the rice and maybe add some veggies if you have some. bake in the over until chicken is done.

Snow and cold here too! This is the perfect warming meal- a big chicken pot pie with cheesy top and lots of veggies. MMM!
Homewarming Chicken Thermidor
2 cups cooked, cubed chicken meat
1 cup diced celery
1 cup frozen green peas
1 (5 ounce) can water chestnuts, drained and chopped
1/2 cup toasted and sliced almonds
2 cups chopped red bell pepper
1/4 cup chopped onion
2 tablespoons chopped pimento peppers (optional)
2 tablespoons white wine
1 1/2 teaspoons lemon juice
1/2 cup milk
1 (10.75 ounce) can condensed cream of chicken soup
2 slices white bread, cut into cubes
1 cup shredded Cheddar cheese
Preheat oven to 375 degrees F (190 degrees C).
In a large heat-resistant bowl combine the chicken, celery, peas, water chestnuts, 1/4 cup of the almonds, bell pepper, onion, pimiento, wine and lemon juice. Mix all together.
In a saucepan heat the milk and soup over low heat, stirring. Pour soup/milk mixture into bowl containing chicken mixture and mix well. Pour this mixture into a lightly greased 9x13 inch baking dish. Top with bread crumbs.
Bake casserole in the preheated oven for 20 minutes, until bubbly. Sprinkle cheese on top and bake for 5 to 6 minutes more. Sprinkle remaining 1/4 cup almonds on top and serve.
Your house will smell SO good while this cooks. Enjoy!

with pasta you can serve with an alfredo sauce or spaghetti sauce
or cut into strips and grill it serve next to rice bed
or grill and put what you like next to it
