I want to paint the walls a light color purple - lavender maybe, then do the cabinets maybe a shade darker. But I also want to incorporate purple in the floor and countertops. I was thinking granite countertops, but havent seen anything with a hint of purple in them. Any suggestions? And how do you think this would look with stainless steel appliances.

I love purple too, but if you have it in every element of the room none of it stands out. It would be tragic if you put in granite counters and no one notices them because they just blend in.

Your idea of the lavender with the darker pop is great. So what if you did a beautiful sand-colored granite with bits of darker quartz in it for your counters and bamboo-colored floors? Then your walls are your statement and your counters and floors look gorgeous against the color in the room. Then against your stainless steel you have a beautifully coordinated and polished room.

If you would like to have purple then go for it!!
Here are a few suggestions for Granite that does have purple:
Kinawa
Misty Mauve
Violetta
If you would like to have purple cabinets, the least expensive way to get them would be to find a custom cabinet maker that works with a laminate such as wilsonart or Formica.
The cabinet maker can use the laminate to wrap around the MDF to make the cabinets just for you. It shouldn't be too expensive because laminate is inexpensive and this is how a lot of builders use to have cabinets made in new construction homes.
Another alternative, you can go with white or cream cabinets with the purple countertops and throw in a purple glass tile backsplash and use the purple as an accent with a mix of stainless steel accents in the backsplash.
If you currently have laminate countertops, I know people have painted their cabinets but the down fall to painting.... it comes off.
Also, Corian has a purple colored countertop the only down fall on this is... if it scratches, the scratches show up white so they will be noticeable.
Stainless steel would look great with this! A very modern look. As far as putting the purple in the floor, you can also get the Granite in little squares and have them incorporated in the tile on the floor. You can lay your standard tile on a diagonal (Diamond shape) and place a small granite square in the meeting point of the tiles. There are thousands of different tiles. Look at a company called DalTile

The stainless steel with the purple sounds fine. Although it does sound like you are going a bit overboard with the purple theme. I would at least do the counter top and the flooring in something other than purple. Would be ok if they had a slight hint of purple in them, just not a lot. I think your idea with painting the walls a lighter purple then painting the cabinets a shade or two darker could definitely work.

It's good to remember that when you decorate, the most important thing to remember is that you make yourself happy. Just don't go too much to extremes. You may not be so happy with the outcome if everyone that walks into it goes, "Oh! It's the BARNEY kitchen!"

It sounds like greys, granites, or black would be good complimentary colors for what you are trying to do.

What I'm trying to get at is to make yourself happy first and foremost, but when you look at decorating your kitchen, think to yourself...Am I going to be happy with this 10 years down the road or so? Or if I ever sell the house are other people going to look at this room and say...what was she thinking?

It's sort of like those bright yellow and black 1950's kitchens or those orange and green Brady Bunch kitchens. You don't want to design your kitchen where it will look out of date a few years down the road. I like some of the old 1920's art deco designs. You can look at them 80 some years later and say wow...that still looks awesome and could still work in today's designs.

I think the light purple walls and darker purple cabinets will work great. But for the countertops and the flooring you may want to avoid putting any tinge of purple in them and just go with something like a granite grey. Because otherwise when people walk into it a few years down the road it might look like that 1950's all pink kitchen that you go "ewww, what were they thinking!"

I hope my opinions don't come across as too harsh. I just wanted to be realistic and honest with you and not just cater to what you want to hear.

Paragraphs are good. White area makes examining lots extra handy on the eyes... maximum human beings (like me) will see that sizeable ole chew of words and not examine your tale. Sorry, yet this is the main suitable suggestion i will grant.
