I am going to Tesco's after work, and fancy making up a fancy meal for myself (yep, just one) this evening!! Do you have any suggestions.

I like most things except the flavour aniseed!!

How about a filet mignon? You deserve it! Sear it in a pan with some oil and then pop it into the oven for a few minutes. Serve with roasted asparagus and a baked potato. Don't forget the wine: Pinot Noir.

Jamie Oliver did a Sainsbury's advert a while ago: roasted butternut squash with sage, panchetta and chestnuts - it's lovely - take a look at the website as it probably has the recipe on but it's literally roast it all together! I've amended how I cook it slightly and have bacon chops instead and sometimes add garlic. To make it more of a meal I sometimes add leeks and sweet potatoes too and roast them along with the other ingredients. A lovely addition is cherry on the vine tomatoes roasted too. With a great bottle of wine this is a really delicious meal. Enjoy whatever you cook!

I am cooking for one tonight, too.

I think I am going to roast a head of garlic.
(Cut the top off the garlic, drizzle with olive oil, salt and pepper then wrap in foil. Cook in 350 oven for about 45 mins. Let cool. Then you just squeeze the garlic head and out pops the creamiest, sweetest, best tasting garlic.)

I will toss some mushrooms, zucchini, yellow squash, a baby red potato, asparagus and onions in some Sun Dried Tomato Vinaigrette with Roasted Red Peppers dressing (by Good Seasons) and roast them in the oven to serve with the steak. (Great heated up in hot skillet with little drizzle of olive oil, if any leftovers.) I will cook this in the oven with the head of garlic I am roasting.

OR, I will make a great garden salad with lettuce, spinach, onions, red bell peppers, tomatoes then season well. I may add a drizzle of red wine vinegar and olive oil. May not.

Then I am going to put a seasoned T-bone (my fav steak) under the broiler and broil it until it is med. Plop a little butter on top and then rub the roasted garlic all over the steak.

I know I will not eat much of the steak so I will put the leftovers in the fridge and use it next week in salads.

Kinda like cooking one really good meal that will turn into several great meals.

There's a listing of step by step main dish recipes at the site below, I've tried many of them and they are quite good. Of course for myself my favorites are always in the seafood section - the ginger salmon is pretty good. Funny thing is I can eat almost anything but I don't like the flavor of anise either! I've tried to grow accustomed to it but I just can't.

P.S. Not sure if you like spicy food or seafood but the Camarones Enchipotlados is VERY good and goes quite nicely with a glass of white wine which also takes the bite out of the spiciness as well. I'm making that tonight with a side of plain pulao.

Chicken, Garlic, Onion, Peppers, Tin of tomatoes, Garam Masala, Turmericand Ginger. Fry off the garlic onion Ginger, Garam Masala, and turmeric, add the tinned tomatoes. Leave to simmer for 10 mins. Add the Chicken and Peppers and leave till cooked. A very healthy low fat tasty meal, serve with rice.

SUPER SUPPER FOR A SINGLE CHICKEN
WALDORF SALAD

2-4 tbsp. mayonnaise
1 tsp. sugar
1/2 tsp. lemon juice
1 apple
1/2 c. diced cooked chicken
1/2 c. diced celery
1/4 c. Baker's angel flake coconut, toasted
1 sm. carrot, cut in thin strips

Combine mayonnaise, sugar and lemon juice in bowl. Cut half the apple in slices; set aside. Dice remaining apples. Stir in diced apple, the chicken, celery and 3 tablespoons of the coconut into the mayonnaise mixture. Serve on crisp spinach leaves or other salad greens with carrot sticks and reserved apple slices. Makes 1 1/2 cups or 1 entire serving.

When I'm home alone I always cook myself the following recipe. I'd love to say it's my own but I found it in Good Food Magazine 101 Pasta & Noodle dishes. Its very easy and you only use one pan so less washing up!

Ingredients:

finely grated zest and juice of one orange
1 tbsp clear honey
1 tsp soy sauce, plus extra to serve if you wish
2.5cm/1in piece of fresh ginger, peeled and chopped to a pulp or grated
1 garlic clove, finely chopped or grated
1/4 packet stir fry rice noodles
2 handfuls of spinach leaves, roughly chopped
1 tbsp sesame oil
1 tbsp vegetable oil
1 large boneless, skinless chichen breast, sliced into strips
sprinkling of chilli flakes.


1, Whisk the orange zest and juice in a bowl with the honey, soy sauce, ginger and garlic.

2, Soak the noodles in boiling water for four minutes. Put the spinach in a colander in the sink. Slowly pour the noodles and water over the spinach, then toss until the spinach has wilted. Drizzle over the sesame oil and mix gently.

3, Heat the vegetable oil in a wok until very hot and fry the chicken over a high heat for 5 minutes until golden brown. Pour in the orange mixture, then bubble and stir for 2 minutes until a shiny glaze forms over the chicken.

4, Tip the noodles, spinach and chilli flakes into the wok and toss gently together until hot. Season and serve straight away, with soy sauce at the table.

5, Enjoy!


Preparation and cooking takes roughly 25 minutes.

It tastes delicious, well worth buying in the ingredients you need so next time you are on your own you will have most of what you need in the cupboard.

try buying ganish corn hens usually two in a packet but use one for ur self boil it in chickien broths for more flavor or just in water ur choice until its white and not red no more then season to ur liking with pepper salt garlic onion parsley paprika for spice and seasoned salt.. season it in a pan and then roast it for an hour at 400 degrees for the brown crust also baste it with the left over chicken broths every 15 mins for it to keep its juicy ness and strong flavor and let it cook last 10 mins put it in the broiler for the dark crispy crust and browning. then start a pot of water with salt and let that start to boil and then when it does add angel hair try for whole wheat or regulars good too not much just enough for ur self add to water let cook when done in a frying pan add garlic and olive oil cook that quickly then pour it into the drained pasta and mix it around so the flavor goes every where then take a bag of simply steamed veges from green giant such as broccoli or green beans put in the microwave till heated then eat with the meal bon appetit

Get yourself a nice Sirloin.
Gently fry in butter for 3 mins either side.
In a separate pan fry some red onion and mushrooms.
When they are nice and soft add to the steak.
Then add a swirl of fresh cream (single).
Sprinkle with salt and black pepper.

Serve with Jacket Potato and either French Beans
or Broccoli,Cauli and Carrots.

Italian chicken.
1 chicken breast butterflied, cooked under grill,
tomatoe sauce,
1 onion finely chopped,
2 garlic cloves crushed.
2 tsp olive oil lightly fry untill onion is soft,
1 tin chopped tomatoes,
2 tspns tomatoe purree,
2 tspns mixed herbs,
bring to boil then simmer for 15 to 20 min
cover 1 side of chicken breast with tom sauce the cover with
mozzarella cheese,
place under grill to melt cheese
salt and pepper to taste
serve with new potatoes and side salad.
Enjoy!
