I wasn't in part of the project. However, I was invited to a very nice dinner gathering. I want to express my appreciation by writing a quick thank you letter to the CEO.

Just simply say thank you for his invitation, and how you enjoyed it (assuming that you really did). That's it!

Writing a thank you note after invited to a party is a really nice way to appreciate the host. I'm sure the CEO would be glad to receive one.

Maybe I'm wrong about this. I'm not sure you should send a thank you note. It might make it look like you think the invitation was based on personal reasons. Also your company would have paid for the dinner not the CEO. If you do send a note keep it very professional. Write something like " Thank you for including me in the recent dinner. Such events are just one more reason why I enjoy and appreciate working for this company."

Actually, it is not necessary or expected. It was a company function.

Should you see the man/woman, you could mention that you had a lovely time and leave it at that.

Be brief and concise : Say, I thank you for that wonderful dinner; and sign your name.
