My chickens are over producing & I've got dozens of eggs. I'm fed up with omlette, scrambled, fried, poached, meringues - anyone got any suggestions what I can do with them.

You can blow the yolk and white out and make decorative eggs for Easter. Or you can sell them! Or you can take them to a local food kitchen and cook everyone breakfast.

Give them as gifts to friends. Or bake cakes below is a link to cake recipes that use lots of eggs. You can make eggnog and have a little party at the house. You can try and sell them at your local farmers market.

Here's one recipe....
10 EGG POUND CAKE

3 c. sugar
10 eggs
1/4 c. evaporated milk
1 lb. solid shortening (2 c.)
3 c. cake flour

Cream sugar, shortening; add eggs one at a time. Mix well. Add flour and milk. Bake at 300 degrees for 2 hours.

ICING:

1 stick butter
1 c. evaporated milk
1 tsp. vanilla
2 c. sugar
1/8 tsp. salt

Combine sugar, milk and salt. Let come to a boil for seven minutes. Add butter and vanilla, then stir until butter is melted. Frost cake while hot.

We have a chicken also and she lays alot of eggs! Well the thing i did not get raid of some of them was i asked people at my work if they wanted fresh chicken eggs! I had alot of people go nuts over them cause having fresh eggs is something you really cant come across anymore! I bought them to work and gave them to the people that wanted them!

Use the egg whites to make a face mask that tightens your skin. Leave it on for 10 minutes then rinse off with tepid water. You'll feel like you've had a face lift.

Or make some puddings that require a lot of egg yolks/eggs

french toast?

egg fried rice

paint the shells and put them in baskets as gifts for your neighbours/friends (use food colouring though)

egg salad

Make quiches and freeze them, in fact make cakes and freeze them too..
.you can add the yolks to mash potatoes, that's delish,
Make everything covered in breadcrumb, you'll need eggs after the flour and before the crumbs,
and as a final suggestion, french toast,,, yummy yummy, with Cinnamon for sweetness

You can use it to make lemon meringue pie (more eggs!), Lemon meringue roulade (even more eggs!) or just eat it on some scones or toast.

Make loads of it, put in pretty jars and give to the neighbours as easter gifts.

Selling might be a solution but be careful of any regulations in your area that may require special zoning, licensing, etc.
Your best bet would be to give them to friends and neighbors or a charitable lunch program.

Yes, you could always do the egg and spoon race, or egg a window, or drink the egg raw. There are tons of stuff you can do.
