You can keep an unopened coconut for up to 3 months. You are technically only supposed to store an opened one in the refrigerator for 1 week or in the freezer for up to 9 months. I had an old roomie who had a coconut in our fridge for about 2 weeks and it stunk really bad after that.

i don't know how long unrefrigerated coconut will keep for, but i have some shredded coconut in my freezer that has been there for about 4 months and is still good...i'd say freeze it...

Keep it air sealed tight. I have used mine i think for at least 3 weeks afterwards. I have also seen some people stor it in the frig and supposedly that helps to keep it fresher longer.
