Some of Paul's letter were addressed to non-Jews, it seems. But that is not what you asked for.
However, I could be mean and tell you that technically Paul was a Roman citizen. Thus many of the books were written by a Roman who was raised in the Jewish faith and had Jewish ancestors.
I have a list of the writers in front of me right now; even looking at their names, they all seem to be Israelites except for the previous technicality.

They were ALL written by Jews. Those who state that Luke was a Gentile have no evidence whatsoever to back them up. However, there is evidence in the Scriptures that Luke was a Jew:
1) Romans 3:1 "What advantage then has the Jew, or what is the profit of circumcision? 2 Much in every way! Chiefly because to them were committed the oracles of God. "
Therefore, if Luke was a Gentile, then we cannot accept the Gospel of Luke as Scripture.
2) In Acts 21, Paul was falsely arrested for supposedly bringing Gentiles into the Temple. When the Jewish people wanted to accuse Paul of bringing a Gentile into the Temple, they chose Trophimus as the one Paul brought. Why didn’t they choose Luke, who was also with Paul, and was an eyewitness to these events? If Luke were a Gentile, it would have been far easier, and far more believable, to accuse Paul of bringing Luke with him into the Temple, rather than Trophimus. The fact that Luke was not mentioned in the accusation is a strong indication that he was not a Gentile. Luke was with Paul on several occasions when they made the various trips to Jerusalem in order to report on their missionary efforts to the apostolic church. The issue was never raised about Luke being a Gentile, although he was there in Jerusalem with Paul.
3) Luke's knowledge of the Temple proves he was a Jew. A Gentile would never have known how to describe Temple furnishings and rituals as Luke did; read, for example, Luke 1:8-20.
There are other strong evidences against Luke being a Gentile. However, we really don't need any other points than the first one, do we? The others just confirm what we should already know: Luke was a Jew.
EDIT: Irak, the Talmud suggests the prophet Samuel wrote Ruth, although this isn't universally accepted. It is nearly impossible that Ruth herself wrote this book. Likewise, the Babylonian Talmud suggests Esther was written by Mordecai.

All the books were written by Jews. Ruth is a book of the Bible that has a gentile as the main character but I am not sure if it was written by her.

The book of Ruth I believe, I could be wrong though, it could also be Luke and if that is the case then there are two books Luke and Acts written by Gentile

As Muslim
we believe that Jesus come as mercy for Jews...Allah banned many things for them....and he sent Jesus to allow some of these banned things
on other hand we believe that Allah is only one...no son and no wife....so for Bible u know and i know that many changes on it has been taken by some people...so i think u should ask which copy is right
