Check health food stores ... which in this case is an oxymoron. Technically extract cannot be made without alcohol.

The vanilla bean needs the 35% or so alcohol that you find in the extract to help remove all the flavor from the bean when it is made. If they just used water, a great majority of the flavor would be lost to the bean and not come out as it is alcohol soluble. I don't know of any that is made without it. You can try using vanilla beans, but I think you would need a large amount to get the same amount of flavor from a teaspoon or two of extract.

most stores sell imitation vanilla extract which has no alcohol in it. you could also buy real vanilla extract and in a small saucepan bring it to a boil for 2-4minutes. all the alcohol would boil off at that point.

You can buy the vanilla bean it self, just gotta scrape the bean out, they say it's alot better,on the cooking shows on T.V.,but the alcohol cooks out, when you put it in a recipe, just like wine ,whiskey or what ever alcohol you use, just puts some very nice flavor in your recipes,
