Sap is the liquid that flows in trees. Sap from sugar maple trees, makes maple syrup. Sap flow is very interesting... check it out on http://www.massmaple.org/flow.html. Sap flow from sugar maples is entirely temperature dependent, so every Spring, when the temperatures start to warm up above 32 degrees, the sap begins to flow because of the positive pressure within the wood. The warm spring days and the cold spring nights are especially effective for making the sap flow. I live in a state where we have maple syrup festivals. The community comes together to eat pancakes and homemade syrup. It can take anywhere from 25-75 gallons of raw sap to make a gallon of finished syrup, depending on the sweetness of the sap.
