is it good manners to wipe the host down afterwards or should i leave her to clean it off herself?

If I know you like I think I do, you'd hold the sneeze until the end of the meal so she's too drunk to notice the snot-shower, but not too drunk to notice the "wiping down"!

Well is your host a cute female host or a manly man host?
If the cute female host definitely wipe her down and then you might not need to finish dinner.
If the manly man host simply say "Dude sorry" and then snicker.

It depends on the host! If the host or others do not fling something at you, maybe it was not noticed.
A cool, moist breeze may have covered up for you.

Turn your head, cover your nose and mouth if possible, and say "excuse me", or I am so sorry!
That is the correct way, or, you can just blow germs all over the food and then eat.
