Yes they can. Think about what type front edge you desire though. The edges of ceramic floor tile are not pleasing to the eye. I have seen the front edge of countertops built up with a piece of wood to cover the edge of the tile. Just make sure you fully seal and finish the wood so moisture will not be a problem.

Yes, and they will work well.

I would suggest a darker grout, which you will need to seal well. White grout can become dingy looking, even if it is well sealed.
