If you really love the taste of raw meat... that's good for you, I guess. But no matter what the situation is, one should never eat well-done meat. It really depends on your taste. Most people like myself enjoy Medium-Rare.

Here's a list of terms describing how well steaks can be cooked:

Raw - uncooked. Except in special dishes, like steak tartare, steak is not eaten or ordered at this stage.

Blue rare or very rare - Cooked very quickly; the outside is seared, but the inside is usually cool and not warm and definitely not cooked. The steak will be red on the inside.

Rare - The outside is grey-brown, and the middle of the steak is mostly red and warm, with the edge of the inside pink.

Rare plus - The outside is grey-brown, and the middle of the steak is mostly red and warm, with some pink. Often ordered by those that prefer medium rare and don't mind rare but worry about overcooking towards medium.

Medium rare - The outside is grey-brown, the very middle of the steak may still be red, fading through pink to a grey-brown near the surface of the meat. Unless specified otherwise, upscale steakhouses will generally cook to this level.

Medium - The very inside is pink, fading to grey-brown throughout the rest of the meat. The outside is grey-brown.
Medium well - The meat is mostly grey-brown with a hint of pink. The juiciness of the steak is reduced when cooked to this level.

Well done - The meat is grey-brown throughout; the juiciness and tenderness is reduced, and the meat may seem dry and chewy. Ordering a steak to this doneness is considered a bit of a faux pas in most upscale steakhouses as it goes beyond necessary safety standards and leaves the meat quite dry.

I like mine medium rare. I am still alive to tell the tale! I also sometimes like eating fresh beef raw - but this should not be done if the age of the meat is questionable and pork and chicken should never be eaten raw.

Onions and mushrooms are an absolute essential to go with the steak with a nice sauce.

It's perfectly OK to eat steak raw if you're sure of your source. Personally I opt for raw steak tartare whenever it's on the menu if I'm at a good restaurant. If I have it cooked, I'll have it blue.

If I'm at a new restaurant, or have any doubts at all about the quality of the meat or cleanliness of the kitchen, I'll ask for it rare. A rare steak is cooked plenty well enough to kill any bacteria on the outside.

It is actually healthier to eat steak cooked as little as possible: it's more natural, easier to digest, and there's some evidence linking burnt food to cancer.

Rare is fine.. the only thing you need to make sure is more cooked is ground beef. With whole cuts of steak the bacteria is on the outside, so the inside can be less cooked. But with ground beef (like hamburgers) the bacteria is chopped up inside with the rest of the meat, infecting even the middle. So for burgers you dont want anything less than a Medium to Medium well burger patty\

Now, while I am unsure of the safety of eating a rare steak, I do know that the longer you cook a piece of beef, the harder it is to digest. Think of that overcooked of beef in your stomach as trying to digest a piece of leather, it's not easy on the old tum-tum. I never order mine past medium, unless I know that the restaurant is not clear on what each doneness means, then I go whichever way needed to get my steak how I like it.

The dangerous bacteria etc on steak are on the outside of the meat, so its perfectly fine to eat it rare, as even the minimul looking for rare will kill any harmful bacteria. The rest is personal taste!

It's disgusting when it's still bleeding!! I like mine medium to well. Most restaurants don't have a clue, it's either still rare or very well done!
