There's really three ways to knock someone out. One has two variations:
1. A strike to the jaw in which you cause the mandible (lower jaw) to slide left or right. There is a cranial nerve just behind the mandible. The second the nerve is tapped by the movement of the bone, it sends a shock to the brain to shut off all non-autonomic activity. I don't know why but it does.
2. Any strike that causes the brain to slam against the inside of the skull. This is actually trauma to the upper brain stem. The same principle as the cranial nerve.
3a. Cutting off the oxygen supply. A pec choke or an improper rear naked choke or any of the strangle holds in which the windpipe (the difference from 3b below) is traumatized or blocked.
3b. Cutting off the blood supply such as in a rear naked choke. Yes, the rear naked choke. Many people are actually doing it wrong. The proper technique squeezes the juggular.

Hitting someone over the head from behind only works in the movies (or in the TV show 24). Most KOs you see in boxing or mma occur when someone gets hit on the chin with at least some power behind the strike, obviously this would be difficult from behind. The rear naked choke suggestion is probably the most realistic, but the person wouldn't be "knocked out" per say, they would be "choked out." This slows the flow of oxygen that gets to the brain and essentially puts them to sleep. However, this isn't sudden, it probably takes 8 - 12 seconds.

I know that you said from the back; however, if you punch someone in the stomach while they are completly relaxed they WILL pass out. This happen to a friend in our American Lit class. For some reason some butt hole thought It would be funn to punch him in the stomach while he was sleeping. After he did (mind you the guy that was hit was pretty big 290lbs at least) he passed out for a few seconds. Close to a minute. Hope this helps.

I'm sorry, but if you knock someone out then you are hurting them fairly seriously. I guess if you had to you could use either a knife hand to the back of the skull or neck, or a hammer fist to the temple.

Me being a ninja, I know a few of these tricks. I've actually only used one on a person, and I almost killed them. So I wouldn't recommend these for anything. Except writing a story.
The choke hold is one of the most common, but to make it more effective, knock them down to their knees and pull their neck upward while choking them. This will cut off more air circulation. Don't choke them for too long however, as it could be fatal.
Usually blows to the head knock people out. But the back of the head is the place to hit. That area is the part that lets you see. Hitting too hard though might be a danger if you don't want to hurt the person.
The last but maybe easiest is getting some sort of cloth (A sock?) to stuff in their mouth, You could use your arm if you have a long sleeve shirt on, but the person will end up biting you. With a sock in their mouth, use your hand to cover the mouth up so they won't spit it out. The saliva and lack of air will cut off their breathing rendering them unconscious.
Just don't forget to plug the nose, a pinch will do.
Honestly, Don't actually use these on people. They can hurt or possibly be fatal. These are for story purpose only.

Cross handed choke hold using the jacket or shirt that they are wearing as a weapon. Just remember that there are two arteries (one on each side of the neck) that must be constricted for the choke to be effective.

But i think hitting some1 frm back side is the nature of a coward.
Especially when the this question is in MATRIAL ARTS i must say NO NO to hit frm back.
But as u want 2 know thn go and kick on his thighs , it'll be the best point 2 hit and he'll go down but still he won't get any serious injury / hurt.

There is never a guarantee that you will not seriously hurt them when you know someone out.
You are causing traumatic concussive damage to the brain when a knock out occurs.
