it is called a contrail, short for Condensation trail. when something warm comes into contact with something cold, or vice versa, (such as cold water being put into a glass) water forms on the side of the glass, but in this case, the water vapor coming out of the engine, meets with the cold air, and instantly cools down, leaving that white streak in the air, which is frozen water.

Not smoke it is ice - at altitude the residual moisture from combustion freezes when it hits the air forming white contrails behind the plane. It evaporates/dissipates slowly leaving a trail for miles.

The perosn is is abouth is correct and i think that that is what you are looking for however you may also be thinking of a stunt plane which writes words is the sky by using smoke?
