Yes it's true, and I speak from experience. I had a friend once who went along with the fad that carrots are the latest in health food. This fad claimed that carrots are rich in Vitamin A and beta-carotene. So he ate a lot of carrots, munching it during snacks, and he ate it raw, thinking that this is beneficial to the eyes. And so, it wasn't long that his skin turned yellow because of Carotenodermia (beta-carotene toxicity.)

All vitamins taken in massive doses have the opposite effect of being beneficial to the body. Here, I would like to reiterate that my friend ate his carrots RAW. I don't know what will happen if you have excess consumption of COOKED carrots.

It's actually more orangish than yellowish, and an excess of beta carotene can do that. It does look a little bit odd, but haven't seem anything definitive showing it to be harmful.

Yellowish skin (jaundice) often represents a severe liver problem or loss of circulation

Yes, carrots will cause skin to have an orangish yellow color to it, esp. on the nose of babies. Temporary coloring is not harmful, it's just the beta carotene form the carrots being released thru the skin. Very cute!

I don't know for adults how much it would actually take but I know for my son, when I fed him carrots as a baby his skin would get yellowish - orange. His doctor said it was the carrots.

not yellowish skin, orangish skin! it has happened to me and my friend, we were having a contest, who could eat the most carrots in a month! after the month, we started turing sort-of orange, and all our friends thought we were sick, then took us to the doctor, and he said to lay off the carrots!
