What does eggplant taste like?

Eggplant is delicious if it's made right. It tastes buttery on the tongue and fleshy on the teeth. It's very moist and it absorbs the flavors cooked with it.

When making eggplant, it's very important to salt the slices or cubes for an hour and then rinse the salt off. This makes them tender.

Eggplant (sauteed in olive oil) goes extremely well with sliced tomatoes (bake at 350 for 30 minutes) and topped with feta cheese.

hmmm, the texture is soft like wintermelon... it's usually cooked with curries or chilli to disguise the taste... tastes something like lady's finger without the fibers and seeds and slime... difficult to explain...

it's a pretty tasty dish, except that too much of it can give you this "full-of-the-same-food" feeling. (in S'pore we call it "jelak" feeling) :)

eggplant, also called brinjal, can be cooked with spaghetti sauce too... give it a try--you can either thank me later or put it in the "tried-but-not-great" list :D
