I am guessing a bottle of wine cannot be packed in a carry-on bag due to the new liquid restrictions. What about in checked baggage? Also does the temperature of checked baggage fall below freezing?

Last I heard, you were still allowed a bottle of wine in your checked baggage, but you can call the airline ahead of time to make sure. You are right that you cannot carry it on the plane yourself. Checked baggage will not fall below freezing, so you should be okay.

You can carry anything but hazardous materials in the checked luggage, just make sure to check with the customs regulations of the country that you are flying into.
No, the luggage hold's temperature is not going to damage your bottle of wine...
