IHow do I cut a chinese (napa) cabbage? Do I cut out the white part or use it all?

pull the leaves all off
now sit down and take it ez
i think you should get a glass of wine
wash them
have another glass of wine
take three or for leaves and cut them down the middle now roll them all up and now cut them and you should be making green ribbons of napa cabbage
how is that wine
watch those fingers after you have been drinking
every thing should be fine now

Use it all! When cut and tossed it all tastes the same if used in salads. Restuarants always use it all. Not to do so is a waste of money. If you cook it with seasonings and a little margarine, it's very good. I don't like to waste anything that's editable.

the whole leaf if eatable....

Nevertheless, the white part has a harder texture, and for some recipes, like your low mein you would probably want to cut the whit out....

It will have a better appearance....

i think you cut out the white part...its like a part of the root.

I use it in soup. Just keep the whole 'stalk' intact - slice lengthwise in a couple of different places and then slice it as though you were slicing celery.
