Its all edible but I would trim the stem end a bit and any wilted leaves. If any part seems too hard or tough toss that part.

You can use it all except the core. You can cut it any kind of way, but it dosen't hold up like Bok Choy does when cooked. Use it in quick stir-fry's or last in the pan when you're cooking something else.

You can use all of it. Just cut it in strips while it is still whole.
