Chilling dough makes it easier to work with because it firms the butter or shortening. You could try spreading the dough about 1 inch thick between sheets of wax paper and putting it in the freezer for about 20 minutes to rush it.

I made them just last night. I should chill it but I never do - however, I find when you form the dough to roll it out, if you add a tiny bit of flour so the dough isn't sticky and doesn't stick to you then it works fine - it makes it more stiff, that seems to work for me in the place of chilling it. They turned out great and are yummy today!! :) Good luck!

You won't be able to use cookie cutters on warm dough. I dare you to try it.
Stiffer cold dough makes cutting easier.
Other than that, cold dough slices easier.
It also spreads more slowly in the oven so you get a better thickness. Using insulated pans helps in that way as well.

I would advise to bake on parchment on top of the baking sheet, so you don't break cookies trying to pry them off the pan. Or a silicone sheet. Either way.

Chilling the dough makes it stiffer and easier to roll out and cut into shapes. Unchilled, it is too sticky to work with that way, although you can still make drop cookies (like how you make chocolate chip cookies). It will just be too sticky to roll out.

Yes, it holds the dough together better, if not chilled the dough will be crumbly. Put it in the freezer for a shorter time.
