If you refer to "last night", you can say:
"napakasaya ko kagabi"

If you refer to a previous evening w/o being specific of the date (so definitely not "last night"), you can say:
"napakasaya ko nung gabing iyun" (i figured you may be planning to tell this to a filipino friend. by the time you decide w/c is the best answer, w/c would be days from now, then definitely you use this one)

I had a lot of fun yesterday = Napakasaya ko kagabi...

I had a lot of fun that night = Napakasaya ko nung gabing yon.
