I'm in college to become an elementary school teacher. On my field experience last week, one of the teachers gave me some websites that she had been using for St. Patrick's Day. Here are some:
http://www.mrsmcgowan.com/march/script.htm
http://www.geocities.com/Heartland/Valley/8966/stpatrics.html?20053
http://www.mrsmcgowan.com/march/pot_of_gold.htm
http://www.mrsmcgowan.com/march/irish_riddles.htm
I'm not sure if these have St. Patrick's Day stuff, but you will probably like them:

About what?
Math?- do multiples of 3 (3 shamrocks), Primary colors? (blue and yellow make green), fables? ( read the story about the giant "prattie" I think its James O'Rourke and the Giant Prattie, writing? write their sentences about leprachauns and what they'd do with a pot of gold, let them illustrate it, etc.
