Well this song was performed in the 1840s,on the surface,the song is a black slave's lament over his master's death. The song however,has a subtext of rejoicing over that death,and possibly having caused it by deliberate negligence,that's the part "and I don't care"your referring too.Believe it or not!

Well I'm glad you asked that question as it made me look it up out of curiosity and now I know...
There are many interpretations of what "crack corn" means, but it seems most experts say it means whiskey. The song would then mean that Jimmy is drinking whiskey and whomever is singing the song doesn't care because the master is gone away meaning dead.

It's a song of isolation and poverty. The ironic twist of corn - which generally doesn't crack except if the farmer is emotionally torn and desolate.
