I made about a gallon of very hot tomato based salsa and was wondering if anyone has ever frozen salsa before. And did it work out OK?

Hi ya

Yes it freezes nicely. To thaw, just leave in regular refrig for a couple days instead of thawing with water or leaving it out.

Yum

It should be ok but not served afterwards as salsa fresca Try adding some tomato sauce or enchilada sauce to it after to help boost the flavor and hide the weird color chopped tomato turns.
And don't freeze so long as to let the tomatoes pick up frost flavor.

My experience with it is that it was very runny after it was thawed out.
