Temperature in 'c' not in gas mark please!

in simple terms please, I've never cooked in my life, not like this anyway!

OK, this is one of my favorites and really easy but looks and tastes very impressive!

Take the chicken breast and a very sharp knife. Look for the thickest part of the breast and slice in to open up a pocket. If you can, make the opening fairly small and cut the inside to make a big pocket. Don't worry too much if you slice straight through.

Get a jar of good quality pesto (M&S is lovely) and grate some cheddar. Mix about a teaspoon of pesto and a teaspoon of cheddar together for each chicken breast and stuff it in to the pocket you cut. Get as much in as possible so that it's pretty much bursting out.

Take your pancetta and wrap a slice aroung the breast so that it covers the hole where the pesto is. Then wrap as many more pieces around as you like (I normally use 2 or 3) and stab them with cocktail sticks to stop it falling apart.

Put a little bit of olive oil in the bottom of an oven proof dish to stop them sticking, put in your wrapped breasts and stick it in the oven at 190 for about 40 minutes. Your chicken will be well cooked and the pancetta should be nice and crispy.

Serve with creamy mashed potatoes and roasted veg drizzled with the juices - yummy!

I agree with the person who said stuff them with the soft garlic cheese, but I would put the pancetta in the pocket too, and then secure. Heat the oven to 375 and let heat. In the mean time add some olive oil in a large pan and brown the chicken on all side very quickly and then transfer to a baking dish with a rack in it. To the bottom of the rack add about a cup of chicken stock, for steam. And place the chicken bundles on the rack. Bake for about 35 minutes on 350.

I would serve this with some pasta that has some of the garlic cheese melted into it and some pieces of the pancetta that has been flash fried and some fresh parsley.

it depends on the size and thickness, probably at 375, if they are small for as little as 25 minutes, thicker and larger could take up to an hour, when i do large individually frozen chicken breasts it has taken as long as an hour and fifteen at 400, you may want to move a little pancetta to the side so you can see the color of the chicken

Slice them length ways to form a pocket. Stuff with soft garlic cheese, wrap in pancetta, secure the 'parcel' with string or cocktail sticks. Poach in chicken stock & red wine. Superb!

Use a pan you can throw in the oven. Oil pan with a little olive oil and heat on hob. Place chicken in pan and sear both sides for two minutes each then throw in pre heated oven for 15 minutes at 170c.

If you never cooked in your life, I suggest you take cooking class first to understand what to do.

You can look up in the internet or a cookbook for the recipe.
