This is a good one and something my husband loves, were havign it Saturday and he doesn't know it yet.
First, for an appitizer chill some wine glasses in the freezer. Once they are chilled fill 3/4 of the way with crushed ice and then top the ice with cold cocktail sauce and then ring the glass with shrimp cocktail sized shrimp, and a lemon wedge. This is an AWESOME presentation and so much fun to eat. You could carry the glasses to the table on a plate lined with a linen napkin.
So, for the dinner, keep it simple.
Ingredients:
20 to 30 shrimp with no tails
1 bag of pre cooked grilled chicken stips cut into bite size pieces (don't buy the frozen, just grab the Tyson ones in the meat section)
Garlic
Olive oil
Butter, not the margerine, real butter
Salt/pepper
Linguini, cooked not rinsed
Fresh Parsley
Lemon
Artichokes, chopped
Capers
A cup of White Wine
In a large pan, heat oil and butter combo, about 4 tablespoons of each. Add the garlic and saute for a few minutes, not burning. Add the chicken and shrimp and cook until the shrimp is done. Add the rest of the ingredients (including the wine) and heat for about 5 minutes, let the alcohol burn off and reduce, then add the noodles that have been cooked and drained but not rinsed and mix it all up and top with fresh parsley and lemon juice when you plate it.
For Dessert you can make these ahead....
Chilled wine glasses
vanilla pudding
chocolate pudding
crushed oreos
cool whip
In the wine glasses, add a layer of vanilla pudding, then a layer of crushed oreos and then chocolate pudding and keep going until you top it with cool whip and more oreos!
You will win his heart with this meal!

Wine is a very romantic means to a meal. It really depends on the type of person your cooking for and the type of food as to what wine you use though. A rack of lamb is always very impressing but some people might not like lamb. The italian route is always a good way to go on a first date and can be fun to eat together. For instance : Lady and the Tramp? Why not throw that movie in while eating spaghetti and meatballs and see if you cant get some meatsauce and tongue action?
That is, If thats your kind of thing!

I think if you don't know what your date likes, you better ask him. When my husband and I were dating, I made him a dinner with filet mignon, cooked about medium rare-- still somewhat pink inside. I found out the hard way that his mom had always incinerated the meat the family ate to the point where no pink remained, and the meat I'd cooked was too underdone for him to enjoy.
Ask your date what he enjoys and if there is any specific way he likes to have it cooked. Try to keep it simple so you aren't having to work like crazy in the kitchen to prepare it. And don't try to cook anything you've never made before-- I learned that lesson when I was trying to prepare a special meal for my family and it included a crown roast of pork, which I had never cooked before. It really didn't come out right, and was probably too ambitious for my capabilities at that time.
Also think long and hard about how you might feel if your date is less than enthusiastic about the food you put in front of him. That is a risk you're taking. Is he a picky eater or fussy about the way food is prepared? Is he given to criticism or can he respond gallantly to your efforts even if they are less than stellar?
Regarding wine, does he like wine? Or would he prefer something else, like beer of some kind? Again, I think you have to ask him about this.

I think nice homemade chicken or shrimp alfredo would be nice. Start with a salad and make some bread with oil/italian spice dipping sauce. Definitley have wine and candlelight! Good luck and have fun :) Maybe even have some fondue dessert for later!

Don't include wine, it may make you do something you never planned on doing. My ideal meal for a date is bbq chicken, chicken rice, bbq baked beans, cornbread, sweet tea and chocolate silk pie for dessert. Yummy.

If your cooking for a man..Surf and Turf....A really good quality Rib Eye..Lobster tail or Jumbo Prawn...Simple tossed Salad and your favourite Merlot, and you for Dessert of course...Sherry N
