I'd like some cookie or fruit-nut bar recipes using brown rice syrup for the sweetener. Thank you.

Many thanks to everyone who has responded. I will try ALL of these recipes as soon as possible. But I do wonder where to find the brown rice crispy cereal. Anybody know?

Chestnut Cookies

5 egg whites, whipped or beaten
1/4 cup of brown rice syrup
1 1/3 cups of flour (I used unbleached white)
1 1/3 cups of roasted chestnuts, finely ground

Whip egg whites, whip in the brown rice syrup (add more if you like very
sweet, but note that most chestnuts are naturally sweet on their own).
When you add the brown rice syrup to the whipped whites, they will go a
bit flat. Not to worry, the recipe works anyway.

Mix the flour with the chestnuts, until well blended. Add the flour mix
to the egg white mix. Drop on parchment paper-lined cookie sheet (or on
a cookie sheet), which has been lightly swiped with oil. Bake 400F for
about 10 minutes. Makes about 18-20 large cookies.

Comments: Cookies are chewey in texture, kind of old fashioned, and not
too sweet (unless you up the brown rice syrup). These cookies kind of
grow on you. Because of the variations in the chestnuts (some are very
sweet, others a bit peppery in flavor), the cookies will vary from bite
to bite!

Healthy Brown Rice Krispy Treats

These are really tasty, although different from the usual marshmallow treats. They hold together very well, but remained a bit too sticky after cooling. Try keeping them in the refrigerator.

1 teaspoon light olive oil
1 cup brown rice syrup
2 tablespoons almond butter (or peanut butter)
2 teaspoons vanilla extract
6 cups dry natural brown crispy rice cereal
1/2 cup peanuts (optional)
1/2 cup raisins (optional) or currants (optional)
1/2 cup unsweetened carob chips (optional)
1/2 cup chopped almonds (optional)

Put oil in a large pot and heat.
Add rice syrup and nut butter. Stir and heat until bubbles form.
Turn off heat and add vanilla extract.
Add cereal and mix well. Stir in any optional items and mix lightly.
Put mixture into a 9 x 13 pan. With slightly wet hands, press mixture flat.
Let set to room temperature. Slice and serve. Lasts a week in an airtight container.

BROWN RICE SYRUP RECIPES
French Apple Crisp
Ingredients:
¼ cup raisins 6 to 8 apples
¼ cup sesame seeds
¼ cup whole wheat pastry flour
¼ cup chopped nuts
1½ cups oatmeal
¼ cup corn oil
½ tsp cinnamon
¼ tsp Emperor's Kitchen® "SI" sea salt
¼ tsp nutmeg
½ cup raisin water
½ cup Sweet Cloud® Organic Brown Rice Malt Syrup
Combine raisins and water in a small saucepan and simmer 10 to 15 minutes. Pour cooking liquid into measuring cup and add water, if necessary, to equal ½ cup. Meanwhile peel, quarter, remove cores, slice apples and set aside. Combine oatmeal, flour, seeds, nuts, oil, cinnamon, nutmeg and salt to make a crumbly mixture. In another bowl combine apples, raisins, and rice syrup. Mix well. Arrange half the apple mixture in a baking pan or casserole dish, sprinkle with half the raisin cooking water, and top with half the oatmeal mixture. Repeat with remaining half, cover, and bake at 350 degrees for 25 minutes. Remove cover and bake 20 minutes more.

substitute the maple syrup for brown rice syrup..I'm sure it will taste just as good.
MAPLE WALNUT BARs

INGREDIENTS

* 2 cups all-purpose flour
* 1/2 teaspoon baking soda
* 1/2 cup packed brown sugar
* 1/2 cup butter
* 1 cup real maple syrup
* 1 egg
* 2 teaspoons vanilla extract
* 1 cup ground walnuts
* 1/2 cup butter, softened
* 2 ounces cream cheese, softened
* 1 tablespoon light brown sugar
* 3 tablespoons real maple syrup
* 3/8 cup confectioners' sugar

DIRECTIONS

1. Preheat oven to 325 degrees F (165 degrees C). Grease an 8 x 8 inch pan.
2. In a medium bowl combine flour and baking soda. Mix well and set aside.
3. In a large bowl with an electric mixer, blend brown sugar and 1/2 cup margarine to form a grainy paste. Scrape down sides of bowl, then add 1 cup syrup, egg and vanilla. Beat at medium speed until smooth.
4. Add the flour mixture and walnuts and blend at low speed just until combined. Pour batter into baking pan and smooth top with a spatula. Bake 40 to 45 minutes or until toothpick inserted into center comes out clean. Cool in pan.
5. To Make Maple Frosting: In a medium bowl, cream 1/2 cup margarine and cream cheese with an electric mixer at high speed. Add 1 tablespoon brown sugar and 3 tablespoons maple syrup, and beat until smooth. Slowly add confectioners sugar and reduce mixer speed to low. Once sugar is added mix until smooth. If frosting appears thin gradually add confectioners sugar until frosting thickens. Spread frosting on top of bars in pan and cut into squares.
