**Pineapple Coconut Upside-Down Cake
1 pkg. (2-layer size) yellow cake mix
3 eggs
1 cup Sour Cream
1/2 cup water
1/4 cup oil
1/2 cup (1 stick) butter
2/3 cup firmly packed brown sugar
3 cans (8 oz. each) pineapple rings, drained
7 maraschino cherries, halved
1 cup Coconut
PREHEAT oven to 350°F. Beat cake mix, eggs, sour cream, water and oil in large bowl with electric mixer on low speed just until moistened, stopping frequently to scrape side of bowl. Beat on medium speed 2 min.
MELT 1/4 cup of the butter in each of 2 (9-inch) round cake pans; sprinkle each pan with 1/3 cup of the brown sugar. Top evenly with pineapple rings and cherries; sprinkle with coconut. Pour half of the prepared batter into each pan.
BAKE 35 min. or until toothpick inserted in centers comes out clean. Immediately invert onto serving plates. Cool slightly.
**Banana Upside-Down Sour Cream Walnut Cake
3 eggs
1 pkg. (2-layer size) yellow cake mix
1 cup Sour Cream
1/3 cup oil
1/4 cup water
1 pkg. (4-serving size) Vanilla Flavor Instant Pudding & Pie Filling
1/2 cup (1 stick) butter or margarine
1/2 cup firmly packed brown sugar
2 medium bananas, sliced
1/2 cup Walnut Pieces, chopped, toasted
PREHEAT oven to 350°F. Spray 10-cup tube pan or 12-cup fluted tube pan with cooking spray; set aside. Beat eggs, cake mix, sour cream, oil, water and dry pudding mix in large bowl with electric mixer on medium speed 2 min; set aside.
COOK butter and brown sugar in small saucepan on medium-low heat until butter is melted and mixture is well blended, stirring occasionally. Add banana slices; cook 5 min., stirring occasionally. Stir in walnuts; pour into prepared pan. Cover with batter.
BAKE 40 min. or until toothpick inserted near center comes out clean. Cool in pan on wire rack 10 min. Run knife or metal spatula around rim of pan to loosen cake. Invert cake onto rack; gently remove pan. Cool completely.

Pineapple Upside-Down Cake

1 can (20 ounces) pineapple slices, drained
1/2 cup brown sugar
1/4 cup shortening
1 teaspoon vanilla
1/2 cup granulated sugar
1 egg, beaten
1 1/2 cups flour
1/4 teaspoon salt
2 1/2 teaspoons baking powder
1/3 cup milk
Melt butter in an 8-inch square cake pan. Add brown sugar; blend with the butter. Arrange 5 or 6 pineapple slices over the bottom of the pan, cutting as needed to fit as many as possible. In a mixing bowl, cream shortening, vanilla, and granulated sugar. Add egg; beat thoroughly. Add sifted dry ingredients alternately with the milk. Pour batter over pineapple. Bake at 350° for 35 minutes, or until a wooden pick or cake tester inserted in center comes out clean.

Well if you want to go for an easy one here is what I do.
1 yellow cake mix prepared as instructed
1 lg can pineapple rings
2/3-3/4 c. brown sugar
1 stick butter
While you prepare the cake mix and the oven heats put the pan with the stick of butter in the oven to melt the butter. Carefully take the pan out when the butter is melted. Sprinkle brown sugar evenly arrange pineapple rings. (note if you would like to add maraschino cherries add them at this point) Pour prepared batter over pineapple. Bake according to cake package then start. It usually takes the longer time.
Also I use the pineapple juice from the pineapple can in place of water sometimes you have to add a little water to it to get the right measurement.

ok first- mix butter and brown sugar till u have a paste. smear it all over the pan.
then take canned sliced fruit (either pineapple, or peaches, or whatever u want. u can even use fresh fruit if u want, but canned is easier.) layer those on the bottom of the pan on top of the sugar paste.
then just take a boxed cake mix- any flavor, (white, yellow, lemon then if u want u can add some flavorings to the batter, extracts, alcohol, fresh juice....whatever works for ya) mix the cake according to the box then pour over ur fruit and bake. when it's done and cool, just put a plate over the pan and flip it over. the cake and fruit should be upside down and look very yummy. not to mention smell good!! good luck!

1 cup shortening
1 1/2 cups white sugar
2 eggs
1 tablespoon vanilla extract
DIRECTIONS:
1. Grease a 9x13 inch pan and preheat oven to 350 degrees F (175 degrees C).
2. Drain crushed pineapple and reserve juice. Combine margarine, brown sugar, pineapple and 2 tablespoons pineapple juice. Spread onto the bottom of a 9x13 inch pan. Add enough water to remaining juice to make 1 1/3 cup of liquid. Set aside.
3. Combine flour and baking powder. Set aside.
4. Cream shortening and white sugar until light and fluffy. Add eggs and vanilla, and beat for 1 minute. Add flour mixture alternately with juice, beginning and ending with the dry ingredients.
5. Pour over pineapple mixture in pan. Bake at 350 degrees F (175 degrees C) for 40 minutes or until toothpick inserted in center comes out clean. Cool in pan 5 minutes and then turn out.

Here's an easy recipe. Take a cake pan, and line with white sugar, then on top of that, line it with brown sugar.
Get a can of pineapples or peaches and drain juice. Place fruit on top of sugars. Mix cake mix according to box, only replace water w/juice.
Pour the batter over sugars and fruit and bake according to the box.
