Crock Pot Recipe
Ingredients:
28 ounces crushed tomatoes
19 ounces canned chick-peas -- rinsed and drained
6 cloves garlic -- minced
1 teaspoon sugar
1 teaspoon Italian herb seasoning
1 tablespoon red wine vinegar
6 fresh basil leaves -- finely snipped
12 ounces medium pasta shells
2 tablespoons grated Parmesan Cheese
Directions:
Combine the tomatoes, chick-peas, garlic, sugar, seasoning, vinegar in an electric slow cooker. Cover and cook on LOW for 6 to 8 hours to make the sauce.
During the last hour, cook the shells separately and drain them; keep warm. Stir the basil into the sauce and serve it over the pasta. Top each serving with the cheese.

Chhole (chickpeas) with sundried tomatoes: yum!
Last night I wanted to make Indian chickpea stuff (chhole) but I didn't have
any real tomatoes. But I did have a package of sun dried tomatoes, so I
used them instead, and got a thick, rich sauce that compensated well for the
lack of the 6 T. of oil that I would have used last time I made this stuff
(yuck, can't believe I ate that!). This looks kind of complicated, because
I am not good at making recipes appear simple, but it really takes only about
1/2 hr starting from cooked chickpeas.
2 c. dried chickpeas, soaked and cooked until tender.
5 medium onions, minced or (if you want to save time) pureed.
reserve about 1/4 c. onion, then saute (or reduce) onion in a wok or deep
frying pan.
Add: 3 oz. sun dried tomatoes plus several dried red chilies, rehydrated
and pureed. Cook for about 5 min. You should have a thick, somewhat dry
paste.
Add:
2 T. cumin (or more if you like)
2 T. ground coriander seed
stir for a minute or so and then add
1 c. chickpea water,
1/2 t. turmeric
2 t. (or more) garam masala
enough cayenne pepper to make you happy with the hotness
salt to taste
stir and add chickpeas. Simmer until the sauce reduces to a dry stuff that
clings to the chickpeas.
Coat with a mixture of:
reserved chopped onion
juice of 2 lemons
one or more fresh green chilies, minced
grated fresh ginger (start with a 1" piece)
2 t. salt if desired
serve over rice or bulgur

A nice spicy Indian chickpea recipe. I know, I know. The beans come from a can. Yeah, yeah. But I was so hungry, and I was in a hurry! Remember this little dish the next time you're short on time, too! To serve as a vegetarian main dish, increase the quantity. Reheats well, too.

2 medium onions, chopped
1 tablespoon grated fresh ginger
2 tablespoons chopped garlic
1 1/2 teaspoons cumin seeds
1 bay leaf
1/2 inch cinnamon sticks
2 medium tomatoes, chopped
1 teaspoon ground coriander
1/2 teaspoon turmeric
salt
1/4-1/2 teaspoon cayenne pepper
2 (15 ounce) cans garbanzo beans, rinsed and drained
1/2-1 teaspoon garam masala
1 tablespoon fresh lemon juice
1. In large saucepan over medium heat, heat cumin seeds, bay leaf and cinnamon until very fragrant, swirling around to prevent burning.
2. Add ginger and garlic, cooking until the smell of those fills the air, then add onions.
3. Saute onions, stirring frequently, and adding drops of water to prevent sticking, until they are translucent.
4. Add the tomatoes, coriander, turmeric, salt, and cayenne.
5. Check for seasoning, adding more as you prefer.
6. Bring to a boil.
7. Add garbanzo beans (chickpeas), cover, and reduce heat.
8. Simmer on low for 10-15 minutes.
9. Stir in garam masala and lemon juice just before serving.
10. Garnish with a sprinkle of chopped cilantro if you desire.
11. Serve with rice, or Indian breads or pitas (breads are best warmed on a hot griddle).

Garlic Lovers Hummus
Ingredients:
2 C. chick peas, cooked in water
3 cloves garlic, crushed
3 Tbsp. tahini, (sesame paste) - found in oriental sections of your grocery store
Juice of 1 lemon
1/4 tsp. oregano
1 Tbsp. olive oil
Salt and Pepper to taste
Directions:
Mash the chickpeas, or put all the ingredients in a food processor to make a paste. Place into a bowl, and serve it decorated with finely chopped onions, chopped parsley, or even Cilantro. Drizzle olive oil on top.
