Tonight I am frying chicken, making homemade mashed potatoes, cream gravy, old fashion macaroni and cheese, collard greens and hot water cornbread.
Didn't say it was healthy! But it sure will be goooood!!!
I have much simpler dinner ideas, just my hubby is coming in off the road tonight so he get his favorite meal.

I am gonna make some home frys and some steak
right now as we speak I have them new york strips getting ready.you gotta get em at room temperature
get a thick cast iron pan hot with bacon fat and drop the room temp steaks into the pan
dont croud the pan
let em sear for 3 mins on each side
then cover up the pan and turn the fire off
let that sit while you fry the taters in a seperate pot
I use a little copper bottom pot with 3 inches of oil and add in about 6 or 7 frys at a time
these are 1/2 inch thick and 3 inchs long
get em floating brown and remove em and sprinkle a little salt
repeat till all the frys is done
then eat!

I made ham and cheesy potatos:
2 ham steaks:
Marinade:
OJ
brown sugar
sprite
salt
pepper
Cover ham steak for an hour then fry in a butter/olive oil mix or grill.
Cheesy Potatos:
1/2 of a 2 pound bag of frozen diced potatos
1 small onion, grated
1 can cream of chicken soup
1 med container sour cream
1 bag shredded cheddar cheese
1/2 stick of butter melted
salt and pepper
Mix all and add to a 9 X 13 pan and bake for 1 hour at 350. Uncovered.

We are keeping it simple tonight and we are having chicken broccoli divan with biscuits and maybe some applesauce
From: Campbell's Kitchen
Prep Time: 15 minutes
Cook Time: 20 minutes
Serves: 4
Ingredients:
1 lb. fresh broccoli, cut into spears OR 1 pkg. (10 ounces) frozen broccoli spears, cooked and drained
2 cans ( 5 ounces each ) Swanson® Premium Chunk Chicken, drained
1 can Campbell's® Condensed Broccoli Cheese Soup
1/3 cup milk
1/2 cup shredded Cheddar cheese (2 ounces) (optional)
2 tbsp. dry bread crumbs
1 tbsp. butter OR margarine, melted
Directions:
ARRANGE broccoli and chicken in a 9-inch pie plate or 2-quart oblong baking dish. Mix soup and milk and pour over broccoli and chicken in small bowl.
SPRINKLE cheese over soup mixture. Mix bread crumbs with butter and sprinkle over cheese.
BAKE at 450°F. for 20 minutes or until hot.
TIP: Broil about 1 minute to lightly brown topping.

BBQ brisket - the brisket has been in the oven for 4 hours now. Just need to let it cool, then slice it thin and serve it up on some garlic toast with some icebox pickles on the side. Good BBall watching food!

Beef tips and noodles!!
Beef tips prepared in the crock pot for several hours so the meat is nice and tender. Put over noodles or mashed potatoes and dinner is ready. Oh yeah, a side salad too!

We had 13 bean soup with brown rice. I was going to have it for lunch tomorrow too, but my husband got to the leftovers first. It cooked about 3 hours on the stove, but was worth the wait!
