I've always made it by adding either cream or half and half with any flavoring powder and some vanilla, and then with that in a small ziploc bag, put that small bag, sealed into a larger bag, that is full of ice and rock salt. This way, the ice and rock salt and cream never touches. Then mix it up by tossing the bags to a couple friends back and forth. This mixes it up really well. You'll have to experiment with different amounts, because it's all to taste.

If you don't have an ice cream maker...you can use this yummy recipe...so easy and so good

1/2 cup half-and-half
1 tablespoon sugar
1/4 teaspoon vanilla
1 sandwich ziploc bag
1 gallon ziploc bags
3 cups crushed ice
1/3 cup rock salt

Put first 3 ingredients in the smaller Ziplock bag and seal bag (Make sure it is tightly closed!). Put ice and rock salt in the larger bag and then add the filled small bag. Seal the large bag.
Squeeze bag until ice cream is thickened, about 10-15 minutes.
Remove small bag, unseal, and eat with spoon.

find a recipe you like and make it in your ice cream machine- which i assume you have...

i am guessing it is the process you are asking about- you place all ingredients in the crock of the ice cream maker and put the lid on, then surround it with ice- only half way up... then pour LOTS of rock salt (or kosher salt) on it, then more ice... then more salt... you will probably have to let it run for about 3 hours, and add more salt and ice to let it freeze- it is frozen enough when you hear the motor start to drag a little...
of course, this is all assuming that you have an old fashioned electric style machine...

you usually need an ice cream churn, but you can make it without one.
