you dont say which age group but here are some of the things ive done with preschoolers ===
build a jungle -either on a bulletin board or in 3-d(we made trees by twisting and squishing bulleting board paper for tree trunks and then a variety of green paper for leaves and tree tops-then this was the basis for adding animals as we made them -some were a group effort(elephant, lion, tiger, ape)others were individually made (flowers, insects, birds)
we made lions by using coffee filters for faces and cut rectangles for bodies and legs and yarn for tails
we danced the elephant dance,
we read lots of books about jungle animals, and other activities, and did lots of fingerplays and felt stories
we made trail mix to use on a jungle safari(walk around the neighborhood looking for "wild animals")
added pretend leaves and jungle animals to the block area and
added hats, jackets, and jungle features to the dramatic play area
you can look in the library for more ideas, books, on the internet too

Make animal masks; first cover an inflated balloon with newspaper soaked in paper glue ( the children love this part cos its messy) once this is dry pop the balloon and cut the papier mache shape in half which gives you 2 masks allow child to choose animal type
paint add ears mane/hair etc. cut eye holes.
Make a monkey swing; String across the room, the children are given coloured paper to cut into strips and throw across the string give each child a monkey shape and lots of funfur, paper and bits to decorate their shape, add a face and hang the monkeys from the string.
