Spam and Cheese Casserole
INGREDIENTS
1 (12 ounce) container fully cooked luncheon meat (e.g. Spam), chopped
2 eggs, beaten
20 soda crackers, crushed
2 cups milk
1 cup shredded Cheddar cheese, divided
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
In a 9x13 inch baking dish combine the meat, eggs, cracker crumbs, milk and 3/4 cup of the cheese. Mix well. Sprinkle remaining 1/4 cup cheese on top.
Bake uncovered in the preheated oven for 1 hour. Let cool and serve.

Spam Omelet (with onions, bell peppers, tomatoes and cheese)
Spam Frittata (same ingredients as above, but add some broccoli)
Grilled Spam (brush some KC Masterpiece BBQ Sauce on some sliced Spam and grill it)
Dice the Spam and use it cold or heated to top salads.
Spam Sub Sandwich (Layer Spam slices, tomato slices, cucumber slices, lettuce leaves, cheese, and any other sub toppings you like on a warm sub bun, then top with some mayo or mustard)
Spam Carbonara
to 8 ounces sliced mushrooms
3 tablespoons chopped green onions
2 tablespoons olive oil
1 Large section of Spam, diced and cooked
1 pound spaghetti, cooked and drained
1 teaspoon finely minced fresh parsley
freshly ground black pepper
salt to taste
2 tablespoons grated Parmesan cheese
Sauce:
3 tablespoons butter
3 tablespoons all-purpose flour
1 1/2 cups whole milk
Heat the olive oil in a heavy skillet over medium heat; add the mushrooms and green onions. Sauté until they tender. Add the diced cooked Spam, blend well, and turn off the heat.
Add the warm spaghetti and blend all ingredients together thoroughly. Add the warm sauce (below), pepper, parsley and salt and blend thoroughly. Serve immediately with Parmesan cheese.
Sauce: In a heavy saucepan, melt butter; add flour and cook on medium-low heat for 2 minutes, stirring constantly. Add milk continue cooking and stirring just until sauce begins to bubble. Remove from heat and keep warm.
Serves 4.
Petty much anywhere you'd use bacon or ham, Spam would be great.

I had to attend a Boy Scout Potluck last night, The Scouts each had to make and Bring the dish the mothers like me could not interfere and help.
One Scout brought a sweet and Sour Spam served over rice.
He diced up the spam added diced pineapple and Sweet and Sour Sauce. He let it cook on med low for about 15 minutes and it was good. this is coming from someone who hates spam.

When it's hurricane season here along the Gulf Coast, we keep several canned goods on hand in case the electricity goes again. Spam is high on the list. Even without electricity, we can throw it on the grill and have quick sandwiches

Diced and added to your favorite mac and cheese recipe. Diced spam, diced onions, chopped bell peppers, make an omelette or wrap in tortilla for "breakfast" burrito.

2 cups diced Spam
1 cup julienned red onion
1/2 cup julienned green pepper
1/2 cup julienned red pepper
4 tablespoons Chipotle Butter, recipe follows
2 tablespoons white wine
2 tablespoons canola or peanut oil
4 (10-inch) flour tortilla
16 ounces Cheddar, grated
1/2 cup diced green chiles
Salsa, for garnish
Sour cream, for garnish
Guacamole, for garnish
In a large frying pan, saute Spam and julienned vegetables in Chipotle Butter over medium-high heat until Spam is lightly browned and vegetables are softened. Deglaze with white wine. Coat another large frying pan with 1 to 2 tablespoons oil. Rub tortillas in the pan to spread the oil, evenly coating each tortilla. Remove tortillas from pan and allow pan to reach medium-high heat.
Divide cheese, chiles, and Spam mixture among tortillas. Fold tortillas over, and place them in the pan. Cook until cheese is melted. Serve, garnished with salsa, sour cream, and guacamole.
Chipotle Butter:
4 tablespoons canned chipotle chiles en adobo sauce, pureed
4 cloves garlic, finely minced
1 cup (2 sticks) butter, softened
2 1/2 tablespoons chopped fresh cilantro leaves
4 teaspoons fresh lime juice
4 teaspoons tequila
Fine salt and freshly ground black pepper
In a mixing bowl, combine chipotle puree, garlic, and butter until mixture is smooth. Add cilantro, lime juice, and tequila and stir or beat until uniformly blended. Add salt and pepper, to taste.

Freshly grated nutmeg
For 1 Refrigerator Pie:
1 frozen 9-inch pie crust
Any one of the following combinations:
Cooked spinach, cheddar cheese, cubed cooked ham
Bacon, Sauteed leeks, and Gruyere cheese
Cooked spinach, canned artichoke hearts, and Parmesan cheese
Roasted chicken, goat cheese, and sun-dried tomatoes
Blanched asparagus and smoked salmon
Port Salut and Spam
In a nonreactive, stainless steel bowl, combine the cream or half-and-half and the eggs. Whisk until combined thoroughly. Add the salt and the nutmeg. Whisk to combine.
Refrigerator Pie Rules: Heat oven to 350 degrees F. Evenly distribute the pie fillings in the pie crust. Do not overfill the crust with the filling ingredients. Do not pour too much royale into the crust. The eggs will expand upon cooking. Bake the pie until it is firm to the touch like set Jell-O, about 45 minutes. Cool the pie for at least 15 minutes before slicing.

sautee onions, garlic, butter & spam. add 2 cans cream of mushroom soup, 1 can evap milk, some water, this mix should be thick. simple sauce for spaghetti or angel hair pasta, kind of like carbonara. really good.

You should ask the Japanese. I saw a show on TV and it was about spam and the Japanese and they love that stuff some even give it for gifts.
