I think that 'most' liquid soap is bought by women, and those are the colors we prefer. To me they just seem cleaner than brown or black soap would.

you can make it any coloryou want. the soap makers have found that those colors appeal to people.

Folks usually don't associate cleanliness with brown or black. It would not sell well.
