PLEASE do not respond with Saltines or Rits. I'm looking for suggestions on good crackers to use that will not overbear the taste of the cheese itself.

no crackers. Just a good crispy French baguette.
make sure the cheese is out the fridge about 10mn prior the tasting to make its flavor the most enjoyable.

Triscuits has a few new flavors that are really good. My family especially likes the olive oil & cracked pepper. They also have a triangle triscuit that is lightly salted and tasty..
In the deli section of our grocery store (Hardings Market) they sell a very thin sesame cracker that comes in a rectangular box. They are great for dips and cheese.

Something plain like a water cracker that way as you say it doesn't over power the cheese itself.

the best cracker for cheese tasting is a cracker from my country call crix, hmmm, nothing's better, you should try it, that's if you could get it, it's from Trinidad and Tobago

hovis crackers are lush with cheese brings out the flavour of the cheese.
