Raeta: Natural yogurt, crushed garlic, a sprinkling of chili powder, cubed cucumber. Mix together and season with salt to taste. Great accompaniment to a hot Indian dish.
In Turkey and Greece there is something similar (Tachiki?) but without the chili powder.
There is also a cold soup with the same ingredients, but the yogurt is diluted with iced water. Great on a hot day.
Ayran is made with yogurt diluted with iced water. A very refreshing drink. You can add salt to taste. This drink (when salted) is also good for people with low blood pressure.
Most bought flavoured yogurts are disgusting and God knows what they use for colouring!

Here's an Indian preparation of yogurt called Kadhi
Beat 1 cup of plain yogurt with 1/4 cup of chick pea flour till it mixes well and becomes of a consistency slightly thicker than milk(Keep adding little water). Put it in medium sized skillet add 3 cloves(break coarsely with fingers) , salt to taste and 1/4 teaspoon asfoetida.Cook for 25 minutes over low/medium heat stirring frequently.(cover to avoid much water loss)
Now heat a tablespoon of olive oil in a pan, put 1/4 teapoon cumin seeds, 1/4 teaspoon fenugreek seeds and when they start to crackle put 1/4 teaspoon turmeric and immediately pour this oil over the simmering yogurt mixture. Simmer for a minute and then serve hot garnished with cilantro accompanied with plain rice.
