I am a resident alien (not a permanent resident or citizen) working here in US. I will be leaving back to my home country in May and if so, can I file my 2007 tax now itself (in May) instead of waiting till April 2008? I know that I will not be receiving any income here after May since I will not be working here.

No, returns aren't accepted until January of the year following the end of the tax year - for 2007, would be January 2008. Many of the forms and regulations would not be available now yet.

The forms will not be available until late 2007 or even early 2008.
