I've had several Christians tell me that homo sapiens don't exist. Yeah... NOT kidding.

We are real, but Homo sapiens is singular, not plural. The Latin plural of Homo sapiens is Homines sapientes, but since it's a scientific name, the Latin plural isn't generally used. You should ask, "Are members of the species Homo sapiens real?"
And just to show how confusing Latin can be, the Latin plural of Jesus is...get this...Jesus (not Jesi; it's not first declension, but fourth).
